Thanks for such a clear and complete demo. That must be one of the best explained videos I've seen on YT! And well done for not having annoying and pointless music on the sound track. I'm just going to fillet my first plaice now.

This is a tremendous tutorial; the narrator is marvellously eloquent and gives concise and clear instructions. It is a masterpiece of a tutorial. Now I need to do perform the procedure on the plaice in the kitchen that is taunting me to make a mess of it.

Thank you for this video. I just started working at a large supermarket chain on the fish counter. The second the boss left me alone a customer wanted a place filleted! Co worker helped but it was outside our comfort zone.

Very, very good great instruction. As you know, it's difficult to slow down and explain something you do everyday so naturally. Really enjoyed the way you broke it down and explained your craft. I'm a chef for nearly 30 years and learned from this.

I was about to comment that this is not how to fillet a plaice. I was taught differently etc etc but when I saw you take 2 fillets off instead of 4 like i was taught i was mesmerised 😂😂 and it was so clean aswell

Truthfully, I'd never realised the skills of the fishmonger, really amazing. I'd love to buy your fish but a day trip from north Shropshire to Camberley might be a bit extreme.

Thanks for this very helpful video. I just bought some plaice from Tesco in the reduced section, didn't realise it wasn't already filleted lol. The part after you filleted the plaice to show where the knife goes along the bone was very helpful indeed. Great vid!

@merlini1 Thanks for the positive comment! It does take practice, but keep at it. We were both rubbish at filleting when we first started. Its a great method, and if you follow it to the letter every time, you'll just get better and better x

@Strykewyrmo Hello! There's so many different ways to fillet all fish. We find this the best way to teach people who don't fillet already, as they always get great results and it encourages them to continue and improve. When we're filleting normally, we wouldn't trim it first, but when someone's learning, the fins and head can get in the way, so best to remove them first. Its all about building confidence and getting results when you're new to it, then you can modify your technique

Here's my method: 1. Try to follow detailed and well-explained instructional video 2. Fuck the first cut up completely 3. Lose the plot and start hacking away in a panic 4. Throw pile of shredded fish at wall

Thanks for this - I never would have worked it out by myself, and I managed to do it more or less. My husband insisted the black skin cannot be eaten and he removed that before cooking - is that right?

Yes, it can be done quicker - and is - in busy fishmongers and shops, but you have to be much slower in demonstrations. Also, many filleters either leave small bones or waste meat because they have to be quick. Take care and do it well is always best.

There might be a couple of tiny pin-bones in flat fish fillets. If you look at the fillet, flesh side up, it has 2 halves with a central line running from top to tail. If you use your fingertips to feel around this line, at the top (head) end of the fillet, you may feel a couple of bones, and you can just make a v-shaped cut to remove them. Also, it's sometimes worth a quick check around the outside edge or 'frill' of the fillet, in case you've left any of the fin bones on when filleting - other than that it will be bone free.

i work in a kitchen, and can fillet plaice in 30 secounds - 1 minuite. theres much easier ways than what you done.
