Introduction
Parda Biryani or Chicken Parda Biryani is a delicious dum biryani prepared by layering partially cooked rice over cooked chicken gravy and coved with puff pastry sheet and baked to perfection. You heard it right! The biryani is covered by puff pastry sheet and cooked in a dum with saffron water and mint leaves, which gives unique flavours to the biryani and makes it stand out among the regular dum biryanis. Parda Biryani Ingredients -
Preparation of Marinade
1 kg Chicken
2 tbsp Ginger Paste
2 tbsp Garlic Paste
15 Green Chillies (slit)
1 tsp Turmeric Powder
2 tbsp Red Chilli Powder
1 & 1/2 tsp Garam Masala Powder
Salt (as per taste)
6 Dried Plums
2 tbsp Coriander Leaves (chopped)
1 & 1/2 cup Yogurt
Sautéing the Chicken
2 tbsp Ghee
2 tbsp Oil
2 Bay Leaves
2 inch Cinnamon Stick
2 Black Cardamoms
5 Green Cardamoms
2 Star Anise
6-7 Cloves
5 Onions (sliced)
For the Dough
3 cups Refined Flour
Salt (as per taste)
Water (as required)
1 tsp Oil
Preparing the Rice
Refined Flour
Fried Onion
Coriander Leaves (finely chopped)
Mint Leaves (finely chopped)
700 gms Rice (cooked)
1 tsp Oil
2 tsp Saffron Water
Kewra Water

Yes.. that is the pot i am asking too. The pot that was used to cook the biriyani with the parda in it. The vessel used to flip is just a regular pan is what I understand. Smita ma'am if you could clarify this for us. 🙏😊

@@Krishnendu792 Yeah LOL and the pandas are rare enough without somebody making biryani out of them! 🐼 But... one never knows. I had a friend from Iraq that went looking for hedgehogs to bbq not knowing they are protected in our country. He stopped scanning for them in the leaf piles once he got to know so no hedgehog was hurt in that little incident phew! Interesting though with cultural and food related differences! 😊

Oooopsy daisy… I tried today my parda biryani was just a mess… it broke and whole roti was stuck to the base… not for me…
Ma'am your recipe was nice and delightful but can you please not wear any ornaments on your right hand if you are using it for mixing. It can cause contamination ma'am. We chefs are not allowed to wear any jewllery or anything of that sort inside the kitchen.
Bloody hell....the rice got stuck into the dough..... pathetic....
