Papa Bill's Family Favorite Coleslaw Recipes | Mom Bates Makes Easy Southern Coleslaw

Mom B joins us again for one of my favorites that I grew up eating. You can't have a cookout without coleslaw and we didn't just have one slaw, we always had 2! This is another recipe passed down from my grandparents, this time it was from Papa Bill, and his convenience store/grill/restaurant in South Carolina. I grew up loving the sweet slaw, and as I've gotten older, I have started eating more of the vinegar slaw. If you try them both, let me know if you have a favorite!
SWEET COLESLAW:
A must for bbq sandwiches, great on hotdogs, great with fried foods and seafood as well! This is the one and done! If you only make one make this one!!!
1 large Cabbage head, shaved or finely chopped.
1 1/4 cup Dukes Mayonaise
4 tsp distilled white vinegar
1/2 cup sugar
1/4 tsp mustard powder
1/3 cup grated or diced carrots
1/4 cup sweet relish
Salt to taste (start with around 1/4 tsp)
1/2 Tbsp Celery seed optional
You can mix ingredients all together in no particular order and stir to combine. I do it a bit different. My preferred method is to whisk the sugar, mustard, salt, and vinegar until sugar dissolves. Whisk in the Dukes mayo and relish, and this is your sweet dressing. When ready, or a few hours before serving, pour dressing over the chopped cabbage and carrots and stir to combine. If you refrigerate for around 2 hours it really makes it complete in my opinion!
PEPPER AND VINEGAR SLAW:
A tangy, pepper taste, I love with seafood, hotdogs, etc.
1 head cabbage shaved, 1/4 head purple cabbage optional.
1/2 cup mayo
1/2 cup white vinegar
1/2 tsp salt
Black Pepper to taste (start with 1/2 tsp but it will probably need more). You should be able to see the black pepper on the cabbage without searching for it, that's kind of when you know you are close to enough.
LIME AND PEPPER SLAW.
Perfect for grilled or blackened seafood, fish tacos, shrimp tacos etc. It tastes light and fresh.
1/2 head cabbage shaved
1/8 head purple cabbage shaved
1 Tbsp mayo
3 Tbsp white vinegar
Juice from one lime (around 2 Tbsp)
Salt to taste (start with 1/4 tsp)
Pepper to taste (start with 1/4 tsp
Optional* If you like cilantro, adding 1/4 cup of chopped fresh cilantro really sets this apart! Whitney can't stand cilantro, but I love it. A little research taught me that to a large percentage of people, cilantro tastes like soap. So for Whitney, I just add a few Tbsp of carrots for color!

    My grandma had dementia and it broke my heart when she couldn’t remember who I was. She was an amazing woman, I miss her very much. I am a caregiver too dementia patients and treat each one as if they were my grandparents.

    I'm like your Mama...I craved coleslaw when I was pregnant. Sonny's BBQ had my favorite. I had a dream about Papa Bill and Mama Jane last night...I just remembered when watching this. They were sitting at a counter in a diner and he was telling stories. When I woke up I started praying for them. They are such a sweet couple and I love seeing all of ya'll sharing stories about them. Isn't it funny how God will lay someone on your heart? Bless them!! I will have to try his recipe. I usually do sugar, vinegar, real mayo, and salt/pepper. Never tried relish before. Blessings!

    Love your mom and dad, both are very special people! I enjoyed this video. My mom used to put a bit of white vinegar and sugar in her slaw, I pretty much try to make it as good as she did. By the way, my parents were born and raised in Tennessee. They moved to Michigan for work in the 50's and lived here for the rest of their lives. I do have a brother and his family that moved to Tennessee in the nineties for work. They still live there, in Franklin. Funny how things happen. Anyway, I wanted you know, that I was raised with southern parents. I consider myself southern, with northern roots. Again, loved this video with both you and Mama Bates ❤️

    About 55 years ago, our family went to Florida on vacation. We stopped at a diner. I ordered a slaw dog from the menu. When I got it, the slaw was pink! The waitress said it was regular mayo coleslaw with catsup added. It was FANTASTIC! I occasionally still make slaw for hotdogs the same way.

    Mom B makes some good potato salad, egg salad, and of course we need to do her family’s pimento cheese… lots to cook and so much to share! Whitney isn’t a fan of smoke so I’ve stuck to grilling! I’ve got a Schwank infrared, a Weber gas, a charcoal and a blackstone flattop… I’m always looking to collect a new way to cook with fire so I’ll definitely share some of them! As a side note, next weeks episode is a collab with @cheftimclowers and @TheFlatTopKing doing smash burgers! These guys have worlds of experience and I had a great time and learned a lot from them so don’t miss that one!

    The slaw recipe is a beautiful tribute to your Papa Bill. I enjoy seeing how different regions of the country make their version of recipes. I'm from the midwest and have never had slaw without sugar or with sweet relish in it. I will give both versions of your slaw a try. We can get Duke's thru Sam's Club online, but Hellman's is the mayo in my area. We make our slaw with cabbage (green & red), carrot and a little bit of onion. The dressing is mayo, sugar, vinegar (usually apple cider which makes it sweeter, and s&p. We also make a sweet 'n sour slaw which is made with a cooked dressing of oil, vinegar, sugar, celery seed, dry mustard and s&p. In the midwest sweet 'n sour slaw is usually available at the local grocery store deli counter. This one also has green pepper added. Every week I look forward to your new recipes. I enjoyed seeing Mama B cooking with you today and sharing family memories.

    I have sweet memories of making coleslaw with my great-grandma growing up. She lived until 103! We cut the cabbage in one of those half wooden bowls with the Ulu knife. Four basic ingredients- cabbage, Best Foods Mayo, sugar & apple cider vinager. Serve cold. 😋

    I have never tasted Duke's Mayo....😭 I grew up in Indiana and have lived in Illinois and now Missouri. I have never even seen it in the grocery stores. Love slaw with Miracle Whip, though, because Mother always made the sweet one with sugar like Papa Bill's. Love your family and so thankful for KZread and the fact that I can still watch your family.     As a pro Chef (college degree) I've been impressed by you ✌ In Culinary School, we learn the 'why' of things (its an Applied Science degree) so I will share in case you or anyone are interested. Cabbage, when an acid (vinegar for example) is added, the vinegar leaches the water from the cells of the cabbage and this is why the longer it sets, the more liquid is in the bottom of the bowl😊 I usually do mine the night before or the morning of so it flavors through, like your sweet Mom mentioned! I love all the slaw❤ What a great video you two!

    Also, when storing the cabbage without the dressing, add a dry paper towel, and it will help control the moisture in the bag. I also do that with lettuce. It definitely helps it last longer and not turning brown. I live in Southeastern Colorado so no Duke's mayo here.😭

    Thank you for sharing! I just made this and it is delicious. I had everything even the Dukes Mayo. It's now available here in California in some stores. I enjoy it. My favorite mayo for sandwiches is BLUE PLATE. My husband is a truck driver, so he goes East a lot and keeps me supplied with Blue Plate, Dukes, and my favorite flour "White Lily", I'm very blessed.

    I Love and respect your Mom she is such a vessel for the Lord ! I actually use Splenda, Mayo (Dukes) , and vinegar in my slaw and my husband adds relish to his .

    All I like in my slaw is very small squares of cabbage with sugar and mayonnaise and I don’t add anything else. I am not a real big fan of vinegar in or on anything but my husband and kids will eat vinegar slaw. It goes great with barbecue and everything you’re talking about. You just can’t beat it.

    If you just do a couple tablespoons of vinegar, you probably won’t taste it! But it tastes fine without it as well!

    Your family is beautiful inside and out you can say they serve Jesus all the way you can tell on your mom. Also that coleslaw is one that I have to try. I don’t like churches coleslaw and I don’t like any other kind so I stop eating it. maybe this will bring me back to eating it again, do you think a starter should make it first or sour?

    It depends on who makes it, some people just plain out do do not make a big batch of slaw! I don’t like vinegar slaw or Dukes Mayonnaise! I was raised on Hellman’s and, Kraft Real Mayonnaise! I use one of those, I use a little mustard, I use a few Pkgs of Splendia , apple cider vinegar, I chop a couple of onions and, put in mine, I put onion powder celery seed salt and, pepper! I make it the way my mom and, grandma made it except the change in sugar. That sour slaw might taste a heck lot better with red cabbage , never seen it made with the mixed cabbage! 18:01

    Aww Papa Bill 🥲. I was a caregiver for my Mom ♥️🕊️... I so know 😢. Prayers 🙏🏻 sweet family. Papa Bill's actions may be different these days but his ♥️ is still the same!! Love seeing your Mom, Zac! I will have to use Avocado Oil- Vegenaise (due to food allergies) when I try your SIaw..and I too have to doctor up my recipes with spices. I haven't made Coleslaw in years... but I will this summer! No Dukes here in the North. Hellmann's Real Mayonnaise is our Dukes, lol. This will sound weird maybe, but we use to put drain Pineapple 🍍 chunks or crushed in our Coleslaw! It's's been a decade since I made it...but that slaw is good tasting 😋! God Bless You All!     I really do love your Mom. She is so friendly and funny. And a very Godly woman. She embodies the Proverbs 31 Woman. But not measuring stuff drives our Pastors wife crazy. She hast to know the exact measuring of every ingredient. We were making Chili one time at Church and not measuring anything we were just pouring stuff into to the pot . She was like wait wait 😮 aren't you going to measure that. We just looked at her and said, it's chili. You can't mess it up." 😂😂😂. From now on I'm going to cut my cabbage like you did. I dont like the bitter core eithe. Great tip .Anyway I love Bates Kitchen.

    Zach, another great blog! I love slaw and you keep it simple with only cabbage, carrots and dressings. You don't add onion or peppers or whatever! They all looked yummy. So nice to see your sweet mom again in your kitchen. So sad about your grandpa. My mother had dementia/Alzheimers many years ago and it was tough watching her change and forget who we were. Keeping your family in my prayers.

    Hi Zach and Family greetings from London UK. I’m going to show my mum these videos as she is a X share as she has retired now but loves cuisine from different parts of the world. She is of African descent that they love coleslaw so I’ll show her these two different ways of making it, and I’m sure she will love serving it when she has parties to. especially when she does fried or barbecue chicken

    My Mimi and Grandad used to always buy us Kentucky Fried Chicken whenever we were visiting them, or they were visiting us, and KFC coleslaw is my favorite slaw to this day. Thank you for having your sweet Mama on and sharing your family recipes with us! ❤

    Chick-fil-A took out their coleslaw at all locations except for a couple in Atlanta I believe! But they did put the recipe online and you can make it exactly like theirs!

    I’ve never had pickles in coleslaw before. Is that a Southern thing? I’m from the desert in the Southwest, so I don’t know if that’s a regional thing or what, but I’m always up for trying new recipes! It’s always nice to see Mom Bates in your videos. She’s just so wonderful!

    South Carolina claims they invented slaw, but not sure how well that argument holds up! As far as regional differences I’m not sure, it’s not as easy as the regional differences in bbq! Regardless, there’s a lot of differences with sweet pickles, dill, pickles, no pickles… You pretty much can’t go wrong!

    Love watching and I enjoy watching y'all fix everything. Not being critical but I would never dream of pickles in my cabbage. I would put that in my potato salad. But it's interesting to know people do that. I love my pork barbecue with cheese dill pickle slices and Cole slaw. And I have to say I love y'alls family so much

    Y'all know about slaw burgers don't you? You just add the slaw right on top of your meat, then add tomatoes, pickles, and onions. Oh man, you won't taste anything better!     My dad's side of the family is from MI & my grandma would make the sweet coleslaw with Helman's Mayo, a squart of Yellow Mustard, Sugar & my favorite Green Onions. That's grandma T's recipe.😋
