Beef Barley Bake:
4TBSP Butter
1 medium onion, chopped
2 cans mushrooms (optional)
2 cans consomme
1 3/4 cups barley
1/2 t salt
Combine ingredients and bake at 350 in glass dish 45-55 minutes.
Cranberry "Salad"
3oz pkg raspberry jello
3oz pkg cranberry jello
1C boiling water
1 can crushed pineapple (not drained)
1C chopped notes (optional...my mom never added these)
(combine above ingredients and chill until set, then combine ingredients below and spread across the top)
Topping:
8oz sour cream
8oz cream cheese
1/2C sugar

    Bring a brick of cream cheese to room temperature and put it on a nice plate. Poor the pepper jelly over top. Serve with a variety of crackers. Dip or spread some of the cheese and jelly on the crackers. So yummy!

    That is a classic. I worked in a restaurant as a busperson back in high school almost 30 years ago. One of my responsibilities was to make sure each new table was given a complimentary appetizer of cream cheese and pepper jelly and a basket of crackers. Sometimes the cook made it red and sometimes he made it green. Whenever it was green there would be a customer who insisted that it was mint flavored.

    A great $5 meal that my family loves is a lentil dish. I'm not kidding when I say that my family gets SO excited when they hear it's for dinner: I cook 2 cups of lentils with 4 cups water and 1 ham hock. I like to add some minced garlic and diced onion, too, but you don't have to. (Just do NOT add salt...the ham hock will season it enough ) I cook it in the instant pot for about 20 minutes. Right before serving, I shred the meat off the ham hock bone. I call it Lentil Stew. It's cheap, nutritious, and tasty! I like to serve it with a salad and garlic bread, but it really is filling and yummy by itself.

    I would have went with 60-75 minutes in the instant pot to start for that roast (more for a larger one), to get it fall apart tender. Also add a splash of apple cider vinegar, before cooking. It helps break down the fibers. It makes a big difference 🙂

    Yes, roast work really well in the instant pot but you have to cook them for the right length of time to get the result you want, just as you would in a slow cooker.

    I have an instant pot. For meat like that it probably needs 60-90 min. I use the chart in the book for a guide when cooking different meats. Thank you for doing these videos! Great ideas.

    I would use the hot pepper jelly for little smokies or meatballs in the crockpot with bbq sauce. You could use for a party, eat over rice or noodles, etc.

    Just a few thoughts on using the hot pepper jelly (or any kind of jelly, really!) but try adding some to grilled cheese sandwiches ( gourmet grilled cheese- one of my favorite uses), using some to make unique vinaigrettes for vegetables or pasta salads, or even adding it as a kick in sauces or glazes for chicken wings or meatballs =)

    OKAY hear me out with the pepper jelly (coming from someone who canned way too much jalapeno jelly). It's great inside a grilled cheese, and really yummy over room temp cream cheese for a dip. Also, great in chili! I like a sweeter spicy chili so it works great in there. Good luck!

    Craziest grits combo I ever made…. I had leftover roasted pork loin and drippings and part of a tub of guacamole. I added a little leftover white cheese dip with salt and pepper. My fellow teachers always expected a crockpot of grits on the days when we had team meetings. They looked at them with trepidation, but after one bite… well the large crockpot was empty before lunch.

    Cranberry sauce, onion soup mix and the orange looking French dressing make a wonderful sauce for chicken. And the cranberry sauce and chili sauce or cocktail sauce do too. Hot pepper jelly is something I seldom have but it's a terrific snack on a cracker with some cream cheese. I think I've read somewhere that if it's the RED pepper and not the green pepper jelly it too makes a good barbecue sauce (as with the cranberry jelly) but I recall that the recipe I red specifically said DO NOT USE THE GREEN, lol. Apparently that was not a pretty sight! Loved this video and congratulations on the 100,000 followers.

    There was a cranberry chicken recipe going around for a while. I use the jellied cranberry for breakfast jelly - works great. It is inexpensive and actually my favorite jelly now. I just store it in a glass jar in the fridge.

    I had the stale marshmallows I used them in a ambrosia salad for Easter. I used 2 cans of drained fruit cocktail 1 can drained mandarin oranges, half a can of crushed pineapple drained a cup of cool whip half cup of sourcream a sprinkle of coconut flakes and stale marshmallows it was a hit at Easter dinner.

    I love using quinoa up to make Buddha bowls - quinoa, roasted sweet potato, chickpeas, kale - you can basically use up whatever you have to make a delicious bowl.

    Lentils can always be added with any type of ground meat recipe to add additional nutrients and extend the meal further. Tacos, sloppy joes, meat sauce, Shepherd's pie, etc.

    Hot pepper jelly is good with meatballs, or over cream cheese and crackers in a charcuterie. Love the ideas you gave for pantry comments.

    I use well seasoned quinoa as a “crust” for egg muffin quiches. Spray the bottoms of muffin tin, add a couple Tbs of quinoa, then egg mixture of choice. Cook 350* 15-20 minutes.

    With cranberry sauce, you can add a packet of onion soup mix and 8 oz. of french dressing with chicken (1.5 or 2lbs) and put it all in the crockpot. Serve over rice. It's delicious!

    The Instant pot is really no fail. It is a different animal than a crock pot, which basically is about low and slow-- long cook time. The IP is awesome, but please read and try the sample meat/roast recipes in the booklet to get the hang of. Also, I think your roast will be so much yummier/better if you first sear it on the sauté setting. Roasts require about 60 minutes on meat/stew or manual setting for slicing, but for shredding, you might want up to 90 minutes, if it is a round roast vs. chuck. Don't give up! :D .

    You could use the pepper jelly to cook some meatballs or chicken in. Maybe have it with some vegetables like stir fry mix or onions and peppers and could serve over rice or with ramen. I love doing roast in the instant pot but I will start mine early and just let it sit on the keep warm setting for several hours. I was so disappointed the first time i made a roast in the instant pot because of it being tough.

    A Country Life has a bunch of great cranberry recipes! (They're cranberry farmers.) A classic recipe would be bbq sauce, cranberry sauce, (maybe some chili sauce), and meatballs in a crockpot.

    Idea for the pepper jelly…Roast Brussel sprouts and bacon…after they are all crispy, toss in pepper jelly! Also an idea for the cranberry sauce is a subscriber recipe that Mandy in the making did…you mix a 1 jar of cranberry sauce, 1 packet of french onion soup mix and 1 bottle of french dressing…pour over Chicken and baked till done. We eat it over rice. It sounds STRANGE but it is DELICIOUS

    Turn your jelly into BBQ sauce and use it for anything: pulled pork, sloppy Joe's, meatballs, wings, BBQ chicken, ribs,etc. I usually mix the jelly with a tomato based sauce or salsa (if there are chunks I blend it) then add seasoning to taste (garlic, pepper, paprika, salt, etc) and some worcestershire sauce. Depending on how sweet the jelly is, you can add brown sugar or honey to taste.

    My mom used to take the Frozen loaves of bread roll out the bread and spread with softened butter. Then she would top with brown sugar, white sugar, cinnamon and either walnuts or pecans. Then she would roll them up and then cut them innto 1-1/2" sluces. Place is buttered cake pan to rise overnight. Bake in the morning. They made the best cinnamon rolls! Pretty great way to use up bread dough in my opinion!

    Here is something interesting to do with stuffing mix-use it when making meatloaf- it already has a ton of seasoning and will replace bread or breadcrumbs.

    I use pepper jelly as a dip for fried cinnamon sugar tortillas. I cut the tortillas into triangles ( chip size) fry in hot oil and then dip in cinnamon and sugar once they are out of the oil. Once they are cool enough to eat, you dip them in the pepper jelly. It is awesome this way.

    I am re-purposing lots of leftovers this week. My fridge was packed. Didn't want to pull anything out of the freezer until we used up all the leftovers. A small piece of ground chuck. Last night made stroganoff just enough to feed 3 people. Tonight is garbage pizzas of odds and ends in the fridge. We love it. Congratulations on a Job Well Done! Butter rice is so very good. 1 c. rice, 1 stick butter, 1 can beef consomme and 1 can french onion soup, . bake covered at 400 for 30 minutes. remove cover and continue to bake for 30 minutes till all liquid is absorbed

    Use the pepper jelly to replace mayo or mustard or ketchup on sandwiches. Great with turkey, chicken, ham, tuna etc. That is the best way to take advantage of its flavor and to stretch it the most because pepper jelly is EXPENSIVE.

    Another way to use up bread is to make salad croutons. Just cube the bread up, toss into a bowl with Olive oil and seasonings. Spread them on a pan and bake to desired doneness. So yummy 😋 I think they will last a week or so, maybe longer.

    We put pepper jelly on top of cream cheese as a dip and serve qith Ritz crackers or even pretzels. So good!! Even my sister and BIL were skeptical until they tried it. 😊

    Pepper jelly…. I take chicken tenderloin, slice them open, add a sliver of mild pickled jalapeño and a teaspoon of cream cheese, wrap that with bacon, cook it on the grill and top with melted pepper jelly, stick under the broiler for a few minutes, makes a delicious appetizer or main meat with a side salad and steamed or grilled veggies.

    For the Instant Pot I always cook a roast on the meat setting. It should cook for at least 90 minutes. This has worked best for me.

    I really appreciate your real life moments, they happen to all of us. For the hot pepper jelly I am wondering if you can turn it into an Asian inspired sauce by mixing it with soy sauce, ginger, and garlic. 🤔 Also, when I make that type of roast I get the best results when I sear the sides and use some kind of an acidic ingredient that helps break it down, such as apple cider vinegar, balsamic, beer, or even pickle juice. Can’t wait to download your Ebook!

    Hot pepper jelly meatballs! You mix it with bbq sauce and it’s similar to the grape jelly meatballs for parties. It comes out spicy, sweet and savory

    The cream cheese/pepper jelly/cracker situation is bomb. It's also excellent added to a vinaigrette as suggested bellow. My suggestions are - 1 use it to glaze pork or chicken or shrimp. Lovely. You can mix it with mustard & rosemary for a pork roast, or bbq sauce for chicken or ribs. 2 I also know someone who cans tons of it so she can use it as an eggroll dip all winter long. Maybe just thinned with a little bit of water and soy sauce. delicious. :)

    Okay your Mom’s handwriting is so very similar to my mom’s. There is a way to use stuffing mix in a meatloaf recipe. Hot pepper jelly an cream cheese on a toasted bagel is yummy!

    Grill chicken , last part of cooking glaze with the hot pepper jelly. Might have to whisk it up and add a splash of water to get it usable for a glaze.

    Use the pepper jelly to add seasoning and a little kick to sauces. Add some pepper jelly to TexMex dishes. Or my favorite appetizer/snack is Cheddar Thumbprints with Hot Pepper Jelly: 8 ounces sharp cheddar cheese, yellow or white cheddar ⅓ cup butter, at room temperature ½ cup freshly grated Parmesan cheese 1 egg, separated 1 ¼ cups all-purpose flour ¼ teaspoon cayenne pepper ¼ teaspoon salt 1 ¼ cups toasted pecans, finely chopped or ground ¼ cup jalapeño pepper jelly INSTRUCTIONS In the bowl of a large food processor, process grated cheddar, butter, Parmesan, and egg yolk until blended. Add flour, cayenne, and salt; pulse until dough forms a ball, scraping down sides as necessary. Turn dough out onto a sheet of plastic wrap. Form into a disc, tightly wrap, and chill in the refrigerator for 1 hour. Preheat oven to 400°F and line two baking sheets with parchment paper. Remove dough from fridge and allow to sit at room temperature for 5 minutes. Pour finely chopped nuts into a bowl. Place reserved egg white in another bowl. Roll dough into 1-inch balls (I use a small cookie scoop to help portion it). Dip each ball in beaten egg white and then roll in nuts, gently pressing to coat. Space appetizers 1 inch apart on prepared baking sheets. Use your thumb or the tip of a spoon to make an indentation in the top of each dough ball. Use a ½-teaspoon measuring spoon to carefully fill each indentation with jelly. Bake appetizers for 14 to 16 minutes or until lightly browned. Allow to cool on baking sheets for a few minutes before transferring to a wire rack to cool completely. Store in an airtight container for up to 2 days.

    As soon as you said 30 minutes on the roast in the IP I knew what was coming and like the other commenters below, I would say 60 minutes minimum especially for what looked like a rump roast. (Very little intramuscular fat and collagen). And for something like that i would have let it do a full natural release instead of the 10 minutes you allowed. A quick or even modified quick release of pressure is akin to squeezing the liquid out of a wet towel and who wants to eat a wet towel. The IP is not a magic bullet and sometimes its not the right tool for the job. I would still use the IP instead of the CP, BUT wouldnt expect either to get a meal on the table quick. One other thought would be to cut the meat into smaller pieces as those would have cooked faster...possibly in the initial thirty minutes. As I understand it, it is not so much the amount (weight) of the meat you're cooking but the density (thickness).

    I love your videos, and that you do pantry videos, using what we already have is so important! I used to be in a very large choir, 100+ people, with a full band and orchestra, we sang a new memorized anthem every week, sang in 3 services every Sunday, plus one on Saturday, did 8 performances of Easter & Christmas programs, we had one month off every year...only July. But I loved it I was in it for 18 years, we did many missions trips went to the jail, and prisons in our area, every year, several times, we also produced 3 CDs ..... miss it so much, but the choir director left that church, as he eas called elsewhere...and the new pastor of the church decided the choir, orchestra, band and drama was unnecessary, so he ended those ministries. I also got married in 2016, and ended up moving 30 miles away, so we go to a different church now.... but ooooh I love choir, and singing!!

    Pinterest GF Quinoa chocolate cake…don’t judge it before you try it! It’s literally the best chocolate cake I have ever had. Stuffing packages could be paired with an oven roast chicken & veggies; meatloaf night, roast Turkey breast & gravy….

    Hot pepper pepper jelly is so good on bagels woth cream cheese! Tou can also spread cream cheese on a plate and top with the jelly and eat with crackers. Make an easy delicious appetizer!
