CHICHARON - is a dish generally consisting of fried pork belly or fried pork rinds.
These are chunks of fresh, skin-on pork belly slowly fried in deep fat until silky all the way through with a bubbly, crispy surface.
INGREDIENTS
2 KG pork belly skin with little meat attached
¼ cup salt
1 tsp whole peppercorn
4 pcs bay leaves
1 whole garlic cut into two
Vegetable oil for frying
