培根開酥麵包卷
食譜:
麵包12~14個
中筋麵粉 520克(4.3杯)
牛奶 150克(3/4杯)
水 140克(3/4杯)
雞蛋1個(帶殼60克)
即發酵母 7克(1+3/4杯)
白糖50克
鹽 6克(1小勺)
食用油 70克(5大勺)
夾層:
無鹽黃油 50克
培根片 350克
烘烤:
烤箱預熱15分鐘
180°C(或365°F)
24分鐘
recipe:
12 to 14 bread
520g all-purpose flour (4.3 cups)
150g milk (3/4 cup)
140 grams (3/4 cup) water
1 egg (60g with shell)
50g Sugar
7g instant yeast (1+3/4 cup)
6 grams of salt (1 teaspoon)
70g cooking oil (5 tablespoons)
Mezzanine:
50g unsalted butter
Bacon slices 350g
bake:
Preheat the oven for 15 minutes
180°C (or 365°F)
24 minutes

十分喜歡你的教學,但可能麵粉的吸水性不一樣,發酵出來的麵團稀到不可以成形!我下次要放少d水/奶, 請問效果會否不一樣呢?而且點解要水多过flour的份量嘅?!我以為比倒是5:5 另外一個問題: 就算我發酵很好,但焗出來的效果也和你的有出入, 意思是 not fluffy enough, don't know why!

Hi, my knead is a silicone knead I bought from TaoBao (Chinese online shopping website). It’s a bit too thin for me so I suggest a thicker one, but the advantage of this one is it’s easy to clean as it’s made of silicone 🥰🥰❤️❤️

您好,完全可以用麵包機揉麵。(注意鹽避免和酵母同放,可以把鹽放在麵粉表面,麵粉放在液體和酵母上面,這樣來隔開)👍🤗❤️🌹

您好,感謝您的喜愛! 對於中筋麵粉蛋白質含量的定義,很多地方不同,但基本集中在8.5~12%之間。 以前我在泰國,中筋麵粉蛋白質含量11.5%左右,我經常用來做麵包也很鬆軟。 但我目前在加拿大這裡的中筋麵粉蛋白質含量13%。做出來效果和高筋麵粉差不多效果。

您好,可以用高筋麵粉的,因為麵粉品牌不同和蛋白質含量不同,所以您可以在看麵團如果太乾可以添加10~20克牛奶,整形時候如果麵筋太強回縮,麵團發酵一次發掘好後整形,可以適當延長鬆弛時間。如果天氣太熱您可以放冰箱裡鬆弛😘🌹❤️

您好,可以的。😘🌹❤️麵團可以揉好後放入雪櫃冷藏發酵一夜,第二天早上取出來整形複溫、二次發酵和烘烤。
老師師我是您的忠實粉絲常学您做面包,我有一個提議您做出來的面包是否都冠上一個名字讓學生學做的時候好找呢?例如波羅包,雞尾包等都有一個名字。
