All pure honey will crystalize. It's best to purchase in glass for this reason so you can put the glass jar inside a hot pot of water (not boiling). Do not microwave or boil the honey as you will "kill" all the good stuff and beneficial stuff inside. Most honey sold in stores is fake or cut with high fructose corn syrup (even if its not listed on ingredient list). Find a local beekeeper to purchase from, local honey is also much healthier for you and good for allergies. Honeys will all crystalize at a different rate depending on what the bees did..
