💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter.     The "artificial" banana flavor is the real flavour of the Gros Michel banana which was the banana of choice until the 1950s. They were slightly bigger than the Cavendish, the modern commercially available banana, with a stronger flavour. This was until a fungal disease called Panama disease struck, which almost wiped out the species because all of the banana plants were spliced identical copies of each other with no genetic variation at all. The same thing is true today for the Cavendish, so another infection will wipe out the modern banana industry.

    When I was pregnant 41 years ago, my system went so haywire that my senses were affected. I used to like bananas, but ever since then, they're disgusting to me. I've always been a very fussy eater, but the older I get, the fussier I get. On that note, peaches and cream cremes would be so light and lovely in the summer heat. Like the combination of fresh peaches and vanilla ice cream. Yum.

    I've never been able to eat bananas. As a baby mom tried the baby cereal with banana and I spat it out. I used to work at a bakery and once I had to make banana chocolate chip muffin batter. I was wretching. A co-worker said I looked green. The weird part is I love the "blue machine" juice smoothies. But I can't taste the banana in them.

    Have you tried chocolate transfer sheets? You can have the Hercules “H” printed using cocoa butter in gold on transfer sheet. All you have to do is just rub it on the cooled covered cream.

    I'd love to give this kind a try as chocolate and that artificial banana (that's really modeled after how bananas used to taste until that variety got diseased and is now extinct btw) in a cream flavor sounds so yummy. We don't have anything like an old fashioned homemade candy store anywhere around me in rural southwest Virginia. I enjoy your videos, as I've learned so much about how candies are made. I make homemade fudge and a few different types of candies around Christmas every year.

    For stampers, perhaps look into a nail stamper. Not sure if there are any that are candy safe but the way images are stamped onto fingernails is pretty cool.

    Artificial banana flavouring is always a curiosity to me. The fact that the flavour is based upon a single chemical - isoamyl acetate - which is found in _all_ bananas, is fascinating. However the highest concentration was found in the Gros Michel, which _used_ to be the _main_ banana that the world was first exposed to. The banana we buy in stores today is the Cavendish, which has a much lower concentration of isoamyl acetate, which is why artificial banana flavour _doesn't_ taste like the fruit we buy now and instead tastes more like the original Gros Michel. I've never tasted the Gros Michel since the Cavendish took over as the main production banana in the 50s, before I was born, so banana flavoured sweets and milkshakes is the closest I will ever come to knowing what that "original" banana used to taste like. The thing I find the most curious, is why modern sweets and artificial flavourings still use a similar level of isoamyl acetate to the Gros Michel, instead of being reduced in concentration to better match the flavour of the bananas we buy today. You'd think people would prefer banana flavouring to be a closer replica of the flavour of the bananas you can buy in stores today - but I guess people still prefer the much sweeter taste of the Gros Michel.

    Maybe you could make the letters on a sheet of wax paper. Then stick the letter on the chocolate before it hardens. Kinda on the same lines as the frosting letters you buy at the grocery store to decorate a cake. Or quite awhile you could buy that anyway. Lol. Not sure if that’s what you have in mind.

    Yellow sprinkles are fine too! People will buy them regardless of topping so you want as quick as you can ! How Cooper works with Scott camera man constantly criticizing I don’t know ! I know he means well but really ! Try it yourself !

    For stamping letters on, you could try a small metal wax stamp (metal so you can clean it easily) you could either -stamp straight into the chocolate -stamp into little dollops of the coloured chocolate and place them on once set -warm it then dip it into a thin spread of coloured chocolate then stamp it onto the candy When Cooper said he was going to pipe a "B" onto them, for some reason I thought he meant "bee" 🐝. For about 3 seconds I was confused why there would be a bee on them, then I "realised" that it was a pun, "bee for banana". Took me another few seconds that it wasn't a pun, he was talking about the letter B 😂

    That's normally what you do for chocolate. I wish they would bring a chef in to educate them for a week or two. So much stuff they do incorrectly or inefficiently it sometimes drives my nuts. Lol

    For the letrers you could use a sheet of plasric wirh the letters stamped in, pour some cocoa butter/chocolate on it, scrape it, take the plastic off and then place the letters on the cremes. I've seen some tiktoks doing stuff like that. Or maybe you could take some inspiration from. The nail world. Again, you'd need to have a silicone pad with the letters on it, put some chocolate on it, scrape it, and them take this stamping tool, youch it to pick up the chocolate and then stamp it on the creme. Or you could put a stencil of a letter over the cremes and then use a paint sprayer with colored cocoa butter in it and spray over the stencil over the creme.

    So now you need a box of all the fruit creams…banana, cherry, strawberry, lemon, lime, orange, plum, grape, apple, blackberry, blueberry, raspberry, pear, apricot, mango, peach, pineapple, watermelon. I love fruits, creams and both milk and dark chocolate🍫 If you made a box of all the fruits, I’d buy it. Like your tropical box…And keep the pina colada and the rum raisin in it just for good measure!

    Pipe the letters onto wax paper, cool them overnight and when the creams are enrobed peel the letters off and kinda glue them on with a little dot of chocolate 😊

    You can buy food paints in spray cans now. I use the spray to make stars and planets on dark chocolate.

    Maybe check into letter stamps for leather and they are big ones and small ones they hit the stamps with mallets so if that would work maybe just dip it in chocolate and press them on

    Instead of stamping why maybe try spraying them on using a stencil and cake spray paint? 100% uniform and can vary colors easily if it would work on your candy.

    On the creme filled when the come out of the cornstarch they seem hard as a rock, what makes them soften up. Does the chocolate soften them

    So theorhetically, if I wanted to make my own cremes at home, do you think I could pour the mixture into a Kitchenaid mixer and stir it on low to get the air into the mix in the same way as the industrial beater you use?

    It's possible - we have seen videos of home cooks doing this. It's also possible for the motor on the mixer to burn out because they aren't meant to run for 30 minutes or more.

    You probably watched Bananas in pajamas. Popular show from the 90’s with a very catchy tune and featured live characters dressed as two bananas, B1 and B2, teddy bears and rat and their adventures.     I've never had a banana flavored product that doesn't taste artificial. Tough flavor to imitate. Now fresh banana in a dessert, outstanding!!! Best flavor ever.

    Fun fact: the bananas in the stores are a variety called a Cavendish banana. The banana in candy is flavored after a different type of banana called the Gro Michel!
