Optimal utilization of fields is: WHF/WBF, PHF/PBF or SBF. For a four field farm, all four fields on WBF or PBF will give you the most variety of food to feed your people. One field on WHF, one field on PHF, and two fields on SBF would give you the optimal variety of crops with optimal amount of cash crops with the optimal nutrition for full harvest every year. Set two fields to WHF, one to FWH, and one to WFH and that will get you the maximum amount of wheat each year. There are four fields, but the optimal crop rotation is two crops followed by fallow, so there is no way to avoid having two of four fields fallow every two years. But, by having two farms on opposite cycles, you can ensure anytime one farm has two fields fallow, the other has two fields of harvest. (W = Wheat H = Hemp F = Fallow P = Potato S = Sunflower B = Buckwheat)

Collect charcoal and eggs in your trading post 1000 eggs and 400-500 charcoal and sell them on the market. You can sell 1000 eggs in one go and the charcoal, and get about 4-6000 coins! Eggs and charcoal come easy in this game. Solved my money problem easily...dont need to think about money :)

You my not of noticed this but the middle button that shows the green tick when on a building.. "resupply" most building have this unchecked for labours using hands.. if you change/tick this then more people like unemployed women will come and help get supply's and take to where needed.. i tend to check the building as i build them.. Also when selling/trading you my buy/sell 20 but the wagons they drop off and take only carry 10 a go.. meaning 2x wagons for 1x of 20 sale..

Also, try putting a row of five or so houses between the farms and see if the people there go to work on the farms. That would save a heck of a lot of travel time if it did. If it worked, I'd make every other house face the opposite way so half the houses are facing the entrance to one farm, while the other half are facing the other; might create a unique foot path pattern. You can eat sunflower seeds. As i know they sell slated sunflower seeds. Used to love eating tem as a kid. So it can be used as a food

Last thing I think he needs to address - last I checked he had 4 men working the thatchery - women should also run the farms

hmmm when you made your field boundaries, you also made it perfectly clear that you don't have OCD. I would have spent a lot more time getting things perfectly square :)
