Begin by first washing and drying your scallops, also allow them to sit at room temperature for about 20 minutes so that they are not cold and cook evenly without much shrinkage. Make sure to pat them dry before seasoning with salt and pepper, this will ensure a great seat and prevent steaming with takes away from the sear.
In a large pan heat up about 3-4 tablespoons of butter on medium low heat and then add in 2 cups of orzo to toast lightly to a light golden brown, remove orzo from the pan once you achieve this golden brown color and set aside. In the same pan add in a little extra virgin olive oil and increase the heat to medium high. Add in your scallops leaving enough room in between each one and leave them alone for about 3 minutes. Cook your scallops in batches to avoid steaming the scallops which cause shrinkage and will not give you that desired sear. After three minutes flip them over and continue to cook for about another extra minute, make sure to season both sides and you can add a tablespoon of butter for extra flavor and then remove and set aside while you cook the next batch of scallops.
Once scallops are done add in extra virgin olive oil and add in your onions with a little salt to cook down. Sautรฉ for about 3-4 minutes then add in your garlic and immediately add in your orzo to combine all the flavors ensuring that your garlic wonโt burn. At this point you can add in your liquid which is 4 cups of crushed tomatoes (use water to wash out the can to make 4 cups) and then season with one tsp of oregano and combine. Add in some lemon juice (1/2 lemon) also some parmesan cheese and stir until everything is well incorporated. Add in about 1 cup of water and cover and let cook for about 4-5 minutes or until your orzo is fully cooked, taste along the way until you get your desired consistency for the pasta.
Once orzo is done add in your finely minced parsley, grate in some more parmesan cheese and add your scallops back in. I like to them add in additional parmesan cheese and some lemon slices to be used to squeeze on the scallops while eating. Pair with Italian bread or a toasted baguette and enjoy, Cin cin!
