El bisel no tiene el ángulo correcto de afilado de 25º.
A nice Idea for this jig, and how to make it. However, the person doesn’t appear to have much experience with the art form of sharpening chisels, or may not even have used a really well sharpened chisel.

IIRC my wood chisels call for a 25⁰ bevel, with a minor adjustment for the micro bevel. What is the angle you put on that chisel?
