What an interesting video on olive oil … as a consumer of olive oil … i simply did not know what it takes to make the oil and now I will only buy the extra virgin oil. I really appreciated the love and knowledge George shared with you and us about his passion. This was such an incredible experience and now I want to go out and get some aromatic olive oil! Thank you for making George’s first experience on social media a special one! You shone a very bright light on this family and their pride and passion- thank you

What you said in your other video about the kindness and generosity of George and his wife and the entire community is so heart-warming. Thank you for this wonderful video. George is a real treasure. Listening to George is learning the secret to a life well lived. His is not a life of avoidance. It is a life of acceptance & celebration. He celebrates his ancestors--the human variety & the botanical variety. I listen to him & I wonder how so many people have lost their way. They know & seem to care little for their ancestors, their history, their roots. They want to move at a faster & faster pace & they want to avoid the normal rhythms of life which include depression, grief, being in sync with the rhythms of all of the natural varieties of life that surround them. They look for answers in all of the wrong places. And they have no idea they are doing this. Thank you George. You inspire me and you show me why life is a precious gift.

You are most welcome. I really enjoy all that you have been sharing. I look forward to more of your adventures beyond Paris. I hope you will continue to update us on the apartment, your activities and include Jean! You can tell you put a lot of effort into your videos. This one in particular was so well done with both your prep on the olive trees and oil production and types. Including George was just genius. The man is a natural and I am totally intrigued by his products and process. I now understand why you chose to go to Crete and help with the harvest. FYI: There is an Italian couple, Lucca and Sara (and baby daughter Luce) who have been chronicling their first harvest on their new property in Italy. Check it out sometime. Very interesting info....I love Extra Virgin Olive Oil!!!...the aroma and the flavor it adds to food...especially sour dough bread!!! I had no idea what determined the specifics of how olives could become Extra Virgin or Virgin Olive Oil rather than just regular Olive Oil. I live in an almond orchard and years ago they used to harvest the almonds by knocking the branches of each tree with a thick rubber mallet. Fast forward to today when they now use low riding units that are air conditioned. The operator drives the unit up to each tree in the orchard, extends the arm on the unit into the tree to shake the branches to release the almonds...it was interesting to watch the process of harvesting olives...especially since I'm such a fan of Extra Virgin Olive Oil!!
