Okra greek style (lathera) - Μπάμιες λαδερές | Greek Cooking by Katerina

For 3 people: 6 handfulls frozen or fresh okra, olive oil to almost cover the bottom of your pot, 1 chopped onion, 2 chopped cloves of garlic, 150 ml tomato pureé, 1 potato cut in medium pieces, salt and pepper.
Για 3 άτομα: 450 γρ. (6 χούφτες) κατεψυγμένες ή φρέσκιες μπάμιες, ελαιόλαδο να καλύψει τον πάτο της κατσαρόλα, 1 ψιλοκομμένο μέτριο κρεμμύδι, 2 σκελίδες σκόρδο, 150 ml συμπυκνωμένο χυμό ντομάτας, 1 μεγάλη πατάτα κομμένη σε μέτρια κομμάτια, αλάτι και πιπέρι.

    this is such a great recipe for an under used and under appreciated vegetable in Canada, and the fact I can use frozen okra is great yummy yummy

    I love bamies, but I cook strictly without any oil. It can still be tasty in the end. I use good quality tomato passata or chopped tomatoes and that can make the difference. If I use cheap tomato product, it doesn't taste as good.

    Hi Irene, I would love to hear the Syrian recipe if you want to share it with me! This way is the classic greek way to cook vegetables as a main course. The group of recipes is called "lathera", which actually means "oily", so this is a tomato based sauce with olive oil. We cook peas, string or broad beans and okra in this sauce. Combined with some feta cheese and a slice of bread it's a complete meal :) Please share the syrian way with us. Best regards from Greece :)

    Hi Katerina, l iust finished watching one of your old videos about okra ! Ilove this food but I don't cook it often, youmade it look so easy!! You speak so good English, how did you learn? I master mine at the age 16 when I migrated to London, England.I lived there 10years and after moved to Australia 53 years ago .Good luck in everything you do and God bless you alwas ❤🌹🦘

    Thank you so much for your kind words and beautiful comments my dear friend. I have never lived abroad, I was born and raised in Greece but I always like to speak English. I studied Agriculture but life took me to the island of Kos, where I have my own car rental business for the last 22 years. Working with tourists and having a lot of English friends helped me speak the language better. My daughter is now studying in England. We live in Athens but spend summers working in Kos. I love all my international friends and enjoy speaking in English, learning special idiomas and expressions is my fav haha. Never had heard of the word "lad" or "bloke" before I met my English friends :) Thanking for sharing your life story with me, it means a lot.     Ok great I have seen and used many recipes that call for tomatos diced, only tomato paste, puree like you, fresh tomato puree(takes too long and in the winter tomatos are not as tasty) I am trying to find the perfect blend I will try yours and thank you so much We miss living in greece as you can see we try and live there through our food

    I think the tomato puree is the quickest way. You are right about everything else :) . You might want to add a teaspoon of tomato paste or ketchup to give it more taste, and a pinch of sugar if the puree is sour. Where do you live? Is it difficult to find tomato puree where you are? I am sorry you miss Greece so much, but you are right again, greek food brings you closer to home :)

    I really hope she will. I have English friends, they only ate their peas and green beans boiled and served with butter (boring haha). When I cooked them for them greek style lathera (same as we cook the okra) it was like they discovered a whole new world lol. So, I hope your wife will like it too :).     Hi, I am not really sure what you mean by quick base, but my standard lathera sauce is the procedure I am showing in this video and other lathera videos (green beans and green peas). Olive oil, onion (and garlic), tomato sauce (purée) and then you add your vegetables :)

    ​@@GreekCookingbyKaterinaI make spinach the same way (without garlic but no reason to leave it out) without meat but it could be added. It's delicious with Greek Yoghurt.

    What a great recipe but I didn't see any water or stock added you only used tomato puree is there a reason you didn't use water or stock?

    Hi Helen and happy new year. The reason I didn't use extra water or stock is because the okra is frozen so there's ice on in which becomes water the moment it hits the pot and because I am using the pressure cooker, so there is no steam evaporating while cooking, it's all trapped inside. If you are cooking in a normal pot then of course you have to add some water to help it cook. This will evaporate and will leave you with a nice sauce texture. I hope I answered all your questions but feel free to ask again if not. Also, I don't know if I was wrong saying the word tomato puree, it's the concentrated tomato juice which is not runny but not too thick either, I mean not like tomato paste, it's as you see it the tomato juice that is sold in supermarkets in Greece.     Λένα μου, αυτή είναι από τις πρώτες μου συνταγές, όταν είχα πρωτοξεκινήσει το κανάλι πριν 2 χρόνια στα Αγγλικά. Τότε νόμιζα ότι θα είχε μεγαλύτερη απήχηση στα αγγλικά, αλλά έκανα λάθος. Οι Έλληνες ενδιαφέρονται πολύ περισσότερο για το φαγητό μας, οπότε πλέον τα βίντεο είναι στα ελληνικά με αγγλικούς υπότιτλους. Η συνταγή είναι για μπάμιες λαδερές. Θα την γράψω στα ελληνικά από κάτω στη περιγραφή του βίντεο, οπότε τσέκαρε το πάλι σε λίγο. Σε ευχαριστώ κι εγώ για τα σχόλιά σου!

    Omg frozen bamyes,people watching this do not use frozen okra,its a sin.if the okra not fresh don't make bamyes,cook something else.
