Milk - As needed
Broken wheat -1 glass
Ghee -1 ½ tbsp + to fry nuts
Water 3 glass
Jaggery - 250g
Cumin seeds powder - ½ tbsp
Dry ginger powder - ¼ tbsp and a little more
Cardamom powder - as needed
Cashew nuts
Raisins
Hi everyone, today, I’m here with a delicious broken wheat payasam recipe for Vishu..
To prepare the Payasam, first, boil some milk in a saucepan and let it continue boiling for sometime until all the water content in the milk evaporates.
Make sure to occasionally stir the milk so that cream does not form on the top.
Next, in a pressure cooker, add a glass of broken wheat along with one and half tablespoon of ghee and roast it until the grains pop and the broken wheat turn aromatic..
When the broken wheat is roasted well in the ghee, add three glasses of water in the same glass which was used to measure the broken wheat and close the lid of the pressure cooker, put on the whistle and cook it for three vessels or until it’s cooked.
The number of whistles required to cook the broken wheat will depend on the size of the broken wheat which you are using.. If the grains are smaller, you may need only two whistles.
Once the broken wheat is completely cooked through, add 250g of jaggery into the pressure cooker and melt it along with the cooked broken wheat. Next, add half a tablespoon of cumin seeds powder, a little extra than a quarter tablespoon of dry ginger powder and some cardamon powder to your taste and keep stirring and cooking it until all the moisture in the jaggery melts evaporates away and it turns into a thick texture.
If your jaggery contains any stones in it, first melt the jaggery in another saucepan and strain the syrup and add it to the cooked broken wheat.
Once the mixture dries up and starts to leave the bottom, add the milk which has been boiling to the pressure cooker and give it a good mix and turn off the flame..
As a final step, fry some cashew nuts and raisins in some ghee and add it to the payasam and our Payasam is ready to be served..
Do not keep the flame on for long after adding the boiled cow‘s milk.

ശർക്കരയുടെ കൂടെ തേങ്ങാപാൽ ആണ് ചേർക്കേണ്ടത്. ശർക്കര, പശുവിൻ പാലിൽ ചേർത്താൽ അത് വിരുദ്ധാ ഹാരമാകും.. പഞ്ചസാരയുടെ കൂടെ പശുവിൻ പാൽ ആണ് ചേർക്കേണ്ടത്.
