Ingredients:
- Chicken: 150g
- Cabbage: 200g
- Carrot: 150g
- Potato: 200g
- Onion: 150g
- Tomato: 130g
- Zucchini: 150g
- Mushroom: 250g
- Canned whole tomatoes: 400g
- Garlic: 3 cloves
- Dried white beans: 100g
- Olive oil: 3 tablespoons (2 for frying, 1 additional)
- Salt: 11g
- Sake: 100cc
- Pepper: a pinch
- Bay leaf: 1
Dashi broth:
- Water: 1500cc
- Root kelp: 10g
Instructions:
1. Soak the white beans in water overnight.
2. Put the soaked white beans and the soaking water in a pot, and heat on high.
3. Once it boils, reduce to low heat and simmer for 40-50 minutes. Remove any scum that appears, then drain the beans in a colander. Rinse with plenty of fresh water, boil again until soft, then drain and let cool.
4. Heat water in a pot to 60°C and add the root kelp, letting it sit for 30 minutes to make dashi broth.
5. Cut the cabbage, carrot, potato, onion, tomato, zucchini, and chicken into bite-sized pieces. Crush the garlic.
6. Crush the whole tomatoes to remove large chunks.
7. Heat 2 tablespoons of olive oil in a pot and sauté the onions. When the onions turn golden, add the garlic, mushrooms, and chicken, and sauté further. Add 1 more tablespoon of olive oil.
8. Add the carrots, zucchini, potatoes, whole tomatoes, and tomatoes, and sauté.
9. Add the dashi broth and salt, and simmer for about 40 minutes.
10. Add the white beans and some of their cooking liquid, and simmer further. Add the cabbage and simmer for an additional 5 minutes. Finish with a pinch of pepper.
