I always have a lot of extra in my garden as well! Not sure if it’s the same where you live Laura, but I bring a ton of my extra produce to my local food pantry! There are too many people who don’t have access to fresh fruits and vegetables from the garden! 🥕 💕

I brown eggplant cubes in the oven then put it and some cubed mozzarella on top of my spaghetti with marinara sauce. It gives the taste of eggplant parm without all the work.

Having never had yellow squash until last week (!!) I so agree! It's amazing! Will 💯 be growing it in my garden next year! I do have zuchinnis for now and looking for recipes with those and their flowers! 😁

Have you considered dehydrating or freezing the herbs and vegetables? You can dehydrate without a machine in most cases

4:20 i've heard there are 'male' and 'female' eggplants; the 'female' ones are those with less seeds and the 'male' ones are full of seeds (i could be mistaken)

So you knew that I just came back from the store with few eggplants ❤. I'll still make it in the my crispy pot just slice them in half. It just too hot for anything else. Specially after my eyes feasted on your 'eggplant not parm'

All eggplant have seeds however the younger the eggplant are the less likely they are to have an overabundance of seeds. In otherwords, buy firm, small to medium sized eggplant. You'll find they are less bitter as well.

I'd prefer to see an L.A. Machine process together eggplant, plantains, and squash, then use the flaky reggiano and dehydrated bread crumbs and blend that all together.

Then, make a tender crumb, cake like dough without any eggs, and a State Fair Batter, and make little Cadburyesque eggs and fry them!
