Nonna Rita's Calabrese Kitchen- Cuzzupe Calabresi (Easter Bread)

Cuzzuca Calabresi (Italian Easter Bread):
Ingredients:
-5lb bag of flour + some extra for dusting
-4 cups of sugar
-12 eggs (+more if you want to include on bread)
-Teaspoon of Anise seeds
-half a teaspoon of baking powder
-1 big Tablespoon of vegetable shortening
-2 blocks or fresh yeast
-2 cups of milk
Recipe:
Step 1:
Mix eggs while slowly adding sugar. Continue mixing until sugar melts and it becomes slightly fluffy but not whipped. (Tip: do not use cold eggs let sit out until room temperature)
Step 2:
Melt a tablespoon of vegetable shortening, and heat up milk. Take some of heated milk and mix in with fresh yeast, stir and break up to get as smooth as possible.
Step 4:
Add the mixed eggs and sugar into big bowl, begin by stirring in the melted vegetable shortening. Next add in warm milk, (not scalding hot). After milk, add in the yeast/milk mixture. Next the anise and baking powder. Continue mixing at each step, then finish it off by gradually adding the flour. (Add more flour if needed, but keep in mind this should be a very soft dough). Lastly cover up and let rise for 2 hours in a warm spot. (To keep warm my Nonna covers with blankets)
Step 5:
Now begin creating your shapes, there are many different options to choose from. Traditionally you will weave an egg into the dough, but this is optional. Watch the video to figure out how to make your shapes. After formed place on tray with baking sheet on it, then cover and let rest for another 15 mins.
Step 6:
Preheat oven to 400-425. Mix together 2 eggs and brush onto dough before placing into oven. Cook on bottom rack for ~10 minutes then finish on top rack for ~5 in a half minutes.

    They remind me of my grandmother. Always had her hands in the food. She was born and raised in Calabria, Italy. My dad, uncles and aunts were born and raised in Calabria too. It’s a small city, your family probably know them lol. I still have cousins who live in the house my family lived in 60 yrs ago ❤️

    Warms my heart to watch your videos. My family is from a town near Cosenza and your grandmother sounds like my mother and grandmother did. I grew up in a family that made the very same things your family makes. My parents and grandparents , and most members of my family who were born in Calabria have passed away and so I love to be reminded of the language, customs and food that I grew up with, but mostly the love and warmth.

    Hi Angela, My family is from a town in Cosenza called Laurignano…My Mamma used to make something similar for Easter but the Cuculi as she called them were of a Cookie Texture…Love to watch Jimmy around his Nonna and his Zia….they are so loving and they are the greatest teachers…..wish they would cook more of their traditional sweets and also different meals as well….but I love keeping up with traditions of our Cosentino Heritage….Angela, do you make cuddurrieddi di patate (plain and with anchovies stuffed into them and fried) ??

    Ciao Angela Buona Domenica delle Palme (Palm Sunday)! I am wondering what town in Cosenza are your family members from? Just curious as I don’t come across many from Cosenza…I live in Ontario, Canada….Most of my close relatives in Italy are now gone but I love to keep up with our family traditions at Good Friday, Christmas , Easter and other traditions we Calabrese have….where do you reside? Wish we were close so we could visit each other for a chat and ciambella with coffee/tea….Blessings and keep well!

    Wow, I love this recipe and that you have two kitchens! How great are the two Nonna's working together? It's wonderful that you think enough of your Italian heritage that you are showing others how proud you are to be Italian and all the delicious food that comes along with it. So glad I found this video, and yes, I have subscribed. I want to see more of Nonna Rita and her recipes.

    I dont agree i just made it and there has got to be something off in the measurements or something lost in translation because it’s the worst cozzupe I ever made and I mAke it every year and wanted to try something different this year thank god Easter is next week I think the oven temp is way too high as well they came out like hard little burned lumps and my cozzupe is beautiful every year
