    First time viewer here. This video popped into my feed likely because I’ve been watching a lot of sourdough focused videos. Not one of them mentioned the rye flour as a way to get a starter going. I am definitely going to give it a try. I am not always good about keeping up with a starter and then am discouraged by the time it takes to develop a new one. I’m also very intrigued by your once a month sourdough baking plan! Anyway, thank you so much for sharing. I will be checking out your other videos as well as the recipes and books you mentioned today. AND might I add, your stove is amazing. ❤️

    I've been searching for someone who uses only wheat berries to make sourdough. I have not tried it yet as I am intimidated by this process. Thank you for sharing.     I've heard whole wheat is scratchy and doesn't allow for great rising in starter. Something about it cuts the gluten? Maybe research this.

    I have also found rye Tobe the easiest and most forgiving starter. I love no discarding. It is just my husband and I at home now. This sounds like a great way to get back into making sourdough after hurricane Laura 3 years ago sidetracked our lives❤

    I’ve left my sourdough in the fridge for over a year and drain the hooch off and feed a few times and it’s good to go and I’ve never used rye flour.

    I've had the same success with my starter using regular all-purpose unbleached flour. I keep it in the refrigerator for months at a time before I use it again. I just stir in the hooch that's on the top and feed it and I'm back in business.

    Rye is the only grain to feed a starter! Goes ballistic, keeps starter well fed longer. I rarely see hooch when i feed and store starter in fridge in-between uses.

    Hi! We did like them! For bread and pizza crusts we do a 50/50 blend of Glenn (a hard spring wheat) and einkorn. For the cookie bars I did 1 cup sourdough starter 2 cups flour 1 1/2 tsp baking soda 1/2 tsp salt 1 cup butter 3/4 cup brown sugar 3/4 cup cane sugar 1 tsp vanilla 2 eggs 1/2 cup oats 1.5 cups choc chips Cream butter and sugars, then add eggs and vanilla. Add in dry ingredients. Then add oats and choc. chips. Spread into a greased 9x13 pan. Bake at 350 for 30 ish minutes It was more of an experiment but they turned out really yummy!

    Thank you for this simple routine video. I am hoping to start my sourdough bread journey soon and have always felt so intimidated to do so. Also, because we are a big family always feel like I have to make SO much of everything ( I am amazed 2 loaves of bread is enough for a month for your family....feeling like this routine would be good for us on a bi-weekly schedule once I get the hang of it).

    Thank you for this video. My biggest concern had been waste if I go to sourdough starter. I love your Mill. I was hoping to choose a Komo or NutriMill for not just the wood exterior, but for the ceramic grind stones, but we just bought a WonderMill (which has steel and crushes versus grinds) to start milling due to lesser cost, but I hope eventually for a hand grinder from Lehman’s. It will be an investment. Thank you again for your epic explanations. Adorable children as well.💝💐 p.s. I forgot I wanted to make a comment about your Aga stove. I noticed that many who choose to live a more relaxing and wholesome lifestyle, choose the Aga. I would love if you had a video as to why you chose the Aga over one of the other stoves the Amish produce and that are sold thru places like Lehman’s Have a beautiful day! 🕊💐

    We go between 4 and 12 hours depending on if we are feeding during the day or overnight but anywhere in that window should be fine!

    We haven't used a white flour. Always a mixture of a hard red spring wheat with einkorn or sometimes spelt flour. Thanks for watching!

    We typically end up using about 7 cups total, but I always like to have some extra on hand. Start with 4 in the bowl with the rest of the ingredients and mix in about a half cup at a time until you hit the right consistency. Thanks so much for watching!

    Great video! i have a hand crank mill but now I want to get an electric one. I'm going to start freezing my bread now. What's the best way to thaw it or what do you do?

    Thanks you! We freeze it in slices and just pull out the slices as needed. They thaw quickly that way and perfect for making toast or sandwiches. We've never tried freezing a whole loaf.

    ​@@FromScratchFarmsteadI freeze whole loaves. Pull out, thaw, slice and refreeze. This allows me to bake less during hot summers. If you wrap it really well it lasts at least 3 months in freezer.

    When you say you feed your starter three times before using do you feed it three times all at the same time or throughout the day? Thank you for all the information! I'm looking forward to using my sourdough starter.

    Good question. Throughout the day. So if we start it on Friday night, we'll feed it that night then again on Saturday morning, and a third time after lunch on Saturday. It will be ready to use by Saturday evening. Hope that makes sense! Happy baking! :)

    Awesome - So glad you are here!! I followed the directions exactly from the book The Art of Fermentation by Sandor Katz to make our sourdough starter.

    We've always gotten our grains from Janie's Mill which is local to us. Azure standard would be a great option too and is less expensive.

    We feed it 3x over a 24 hour period. Usually start it at night and feed it. Then in the morning and mid day to make stuff the following evening after we initially started it.

    @@caseylohman3309 We actually found it used locally on FB Marketplace. It was the find of a lifetime! They're way beyond our budget new, but they do pop up used from time to time.

    Good question! With using freshly ground whole wheat, we've always gotten more of a dense sandwich bread. I wouldn't call us sourdough experts at all but we don't mind the more dense loaf. Thanks for watching!

    Il n'y a pas des soustitres francais en France/KZread France?? Quelle domage. Je n'avais pas trouver que l'anglais closed captions /soustitres. Elle explique bien, comment ils font les pains, les pizzas de sourdough/Sauerteig (desolee, je ne sais pas comment en francais ) Peut-etre Google peut traduiser? Excuse moi, je ne peut pas utiliser les accents avec cet portable. Bonne chance

    Even if you use rye flour to feed your sourdough starter, you don’t taste the rye at all in the bread or whatever you are making if you use a different flour for making it. For example, we use a 50/50 hard spring wheat and einkorn for our bread, just use the rye to feed our starter. We don’t taste the rye at all! Hope that helps!
