    Yes, Amen, my friend! It is the most beautiful sight at Grandfather Mountain and Boone! We went there on our honeymoon and spent many vacations there. ❤️ It is so breathtaking at Blowing Rock as well. God's splendor is overwhelming to me as well. He is such a great God!

    Another Tip use the oven ready manicotti tubes and you don't have to cook them. I make a Ricotta and parmesan cheese filling and fill the tubes by placing filling in a plastic bag, snip the corner and squeeze filling into the tube. It works great.

    Beautiful photos! I will never forget the first time I went out west. We were in Colorado and came around the curve and there before me was "the purple mountains majesty". I cried. I honestly could not talk for like 5 minutes with out choking up. God is amazing and we are blessed to live in this beautiful country. Thank you for the video.     @@InTheKitchenWithMommaMel it is SO worth going! We drove highways but also side roads. Through Texas you can see so many Indian Reservations full of poor natives. It broke my heart. And the beauty of the country is amazing! So worth going.

    I love the sundried tomato pesto. I make a breaded grilled cheese with it. Take two pieces of a hardy bread and spread some of the pesto on both pieces. Add some sliced fresh mozzarella between them with the pesto towards the middle. Dip sandwich in some beaten egg and then in some Italian breadcrumbs or panko. Cook slowly in a pan with plenty of butter until both sides are toasty and cheese is melted. This is amazing with a creamy tomato soup.

    I visited Portugal about 40 years ago & the fruit that we ate there was so delicious and flavorful and beautiful! Words can’t describe the tastes of the peaches,strawberries, and even the grapefruit. I was trying to describe the fruit to my aunt and i was so overwhelmed with emotion because I knew that I experienced God’s love first hand. I felt like she thought I had lost my marbles because I started crying while describing it to her. It’s good to know that there’s another human besides me that gets emotional when witnessing beauty that our Heavenly Father created just for us.

    When I make noodles likes large shells, manicotti, or lasagna, I drain the water and fill the pot with cold water it helps firm up the noodles quicker so you can just pick them up!

    Our grater disappeared as well. So it’s one of the things our family will get as a family gift for Christmas. As my boys get older, they’re helping me in the kitchen. They are enjoying learning. My boys won’t be relying on anyone to cook for them and they know that they can cook for their future partners too.

    My Mammaw had a little plastic tree with spikes on the branches, and it was to put the spice drops on for Christmas! The bottom was a shallow dish to scatter loose ones around it, those spice drops really brought me back❤️

    When making manicotti the best thing to do is not to cook the noodles at all and then try to stuff the manicotti and then put sauce over the noodles and let it cook and one pan. That’s always worked for me. You can even par boil the noodles that way there’s still a little tough or what you would call al dente but I would just cook them for four minutes

    My manicotti tip is after cooking, take a pair of scissors and cut lengthwise to open up. Put filling in center, roll up and put seam side down In casserole dish. After cooking, comes out clean! No more frustrating stuffing the fragile tubes!!

    I live in NC and I love Grandfather Mountain. You are so right about God’s beauty and how amazing it is to take it all in. Thank you for the recipes. I love manicotti. Did you know you actually do not have to boil the pasta first? Once I found that out, it was a game changer, especially when stuffing with a ricotta filling.

    I'm from Pennsylvania, & when you were talking about how cold it was on top of that mountain, & getting out your coats & "toboggans" I was so confused. I was wondering what you'd need toboggans for when there's no snow? You see, in my neck of the woods, a toboggan is a wooden sled without the metal rails underneath to slide on. It's flat & made of long strips of wood, & the front part curves up over where your feet would go. Some are long enough for several children to ride on all at once. We call the hats you were wearing "beanies" or "tossle/tassle caps". I love how different regions have different names for the same thing. Makes the world more interesting. My roommate used to live in N. Carolina, & he said when he first moved there from up north, he was totally confused about toboggans too, lol. Thanks for your easy to follow recipes & entertaining videos. I watch you & another southern lady who cooks on KZread because aside from the great, easy recipes, I just love to listen to "y'all" talk in your warm, lovely accents.     It is such a treat to watch your videos, Momma Mel. Your voice and sweet demeanor carry us along as you put together those lovely dishes. We didn’t make it to the Blue Ridge Parkway/Skyline Drive this fall, so thank you for the footage you provided of your trip. Have you ever been to Peaks of Otter in the Virginia portion of the drive? It’s a beautiful place to visit. We spent our anniversary there a few years ago in the lodge. It was very, very cold still in March, but we still enjoyed the trip. Happy Thanksgiving!🦃🍁🦃🍁🦃🍁

    I live close to the Blue Ridge Parkway in VA .. we use it to drive to church, and shopping toward the south. Its is great to be able to jump on it and go either direction. Have a very blessed Thanksgiving!!

    I love your recipe videos, but you really blessed my heart with the videos of your trip - I love North Carolina. I was stationed in NC for 6 months during Operation Desert Storm and I fell in love with it. I'm in Southern California and haven't been back - hoping to visit once I retire next year. Thanks again!
