    Ifound this recipe over a year ago and I have made it numerous times. I also shared it with my mom....it has become our (mom and myself) go to fudge! It is wonderful and has not failed once and I can honestly say I've made my grandmother's recipe many many times over the years and have failed many many many many times lol. Thank you so very much for this recipe and the great instructions! I also love your other fudge recipes and make them as well and they also have not failed me. I make these during holidays for neighbors and for my husband to take to work for everyone. Again, truly appreciate it. Have a wonderful day.

    Just tried this recipe today, it came out perfectly! I used to make the fudge my dad made, the old fashioned Hershey’s fudge - cook to 234 degrees, then cool to 110 degrees, then beat the heck out of it before pouring into a dish to set up. Your recipe is so much easier and tastes identical, all in far less time. I still used a candy thermometer to determine soft-ball stage, but otherwise followed the recipe, except I used butter instead of margarine. Delicious and easy and my new go-to for chocolate fudge. I’m so excited to try your other fudge recipes, thank you!

    When stirring on the stove it’s helpful to use a utensil with a very flat edge; a rounded edge tool only only gets a point from the bottom of the pan. Look for that in either Silicone or wood. Also cut the stick of butter into cubes, you get a quicker melt. I can’t wait to try this today. Many thanks!

    Old fashioned fudge is so good. I'll have to try it with the added chocolate chips. We usually made ours by adding black walnuts. My dad used to gather, hull, Crack and pick by hand. Can't get any fresher than that!

    Hi Mary! That sounds wonderful. Nothing better than fresh walnuts, except the better memories that come with them. In our recipe, we just like the added chocolate chips, just gives an extra special something without overdoing it. We also have videos for peanut butter fudge, chocolate-peanut butter, maple, maple walnut, white chocolate-black raspberry, snickerdoodle, and Mocha frappe.     Haha, thanks, Dena. That's a cute story. My parents never denied having a sweet tooth, but my dad used to deny liking pizza. I remember being a teenager, and sometimes he would say at night "hey sis, why don't you call and order a pizza if you want?" I knew that meant Dad wanted a piece of pizza. When it would arrive, I'd ask him if he wanted a piece, and his reply was always, "Oh heck, I'll try a piece," then he would eat another lol. Funny memories 😄 🤣 thanks for sharing yours ❤️

    Yes, that's a good idea. Cast iron is best, but any big heavy bottom pan will do.

    Saw this across my feed and just had to give this recipe a try. I’ve had so many traditional fudge recipes fail but this one is absolutely flawless. The directions were easy to follow and the resulting fudge is luscious, creamy and intensely chocolaty with a taste reminiscent of high quality brownies. Thank you so much Penguin!     If you use 1 cup of evaporated milk instead of whole milk the fudge. Will be creamier

    I remember making the old fashioned fudge with my mom and my kids and getting it in the pan and spread out before it started to set up. I have a candy thermometer, but I do the soft ball test it's much easier,my mom and granny always did the soft ball test. I make 1 plain batch and 1 with walnuts(for my son).Looks delicious and now I want fudge😄😄😄😄..Love you both tons and a kiss to Poohdy Doo from Lola💋💜

    Ruthie, it's amazing to me the memories that come flooding back just from making fudge. I teared 😢 up earlier, because I was missing being in the kitchen with my mom. I had to stop though, cause I could hear my mom say, dust it off and get back to work, we have fudge to make lol 😆 I prefer the chocolate with nuts, but chef likes it plain.     Thanks Willow. Yes, this is chef's favorite. He likes it without nuts, so I add extra chocolate lol. I'm not a plain chocolate fudge fan, it's good, but I like chocolate peanut butter fudge like I made last Vlogmas. We need to master sugar-free fudge.     I make mom's hershey cocoa recioe. No problems. Intense chocolate flavor. Better thinner pieces because so rich. Well worth time. Chips do not deliver same intense flavor.

    Oh my....YES!!!! My mouth was absolutely watering while I watched the entire process. My mother never had any problem making this delicious fudge but I had many, many fails. She never used a candy thermometer either and it always turned out fantastic. I had more success with a candy thermometer BUT I think now that's because I didn't know what that soft ball of fudge was supposed to look like!! I have saved your video to my video library and I have shared it out. You did a fantastic job! And I totally agree with the Chef: other fudges are good but this Hershey's fudge is THE BEST!! By Far!! Thanks for making it! You made an ol' gal happy this morning as I watched the process. It brought back some great memories of my childhood -- hey, licking the pan after it cooled was a "job" we kids loved -- and it made me want to make some fudge! Have a great week-end you guys!!

Chef loves this fudge most of all. I'm glad you enjoyed the video. No, no candy thermometer here. I have one, but never use it unless I'm making rock candy. I just don't trust the thermometers for this, I trust my method more, and it never lets me down. Thanks so much for sharing this video.     You can even do this in the microwave. In a buttered plastic bowl mix the sugar, cocoa, and milk, and nuke it for 2:22. Cold water test it, stir it a bit, scraping the sides of the bowl, and it will probably need another 2:22. Cold water test it again; if it hasn't reached soft ball stage, back in the microwave in 30 second increments until it does. Then add the butter-or-margarine and vanilla, and beat it until it thickens. If you undercook it, it won't harden (at least it will be great on ice cream); if you overcook it, you have chocolate concrete. This fudge isn't as sweet as the marshmallow kind.

    This fudge looks very good but I have a question. My husband's grandmother's fudge broke apart a little and I really liked it. I have been unable after quite some time to find a recipe for fudge that somewhat breaks apart a little when you take a bite out of it. I wonder if I cooked the fudge a bit hotter than softball stage if it would be this type of fudge that I really like. I think I will try to do that with this recipe but what do you think? Is there anyone else out there that likes this type of fudge? :)

    Hi Tammy 👋 If you mean crumbly and creamy, then yes, this can do that after a day or two, or if you choose to cook it a little over, don't go more than one minute. I think you'll really enjoy it.     Hi Nancy. Yes, you can do that. Add about 2-3 heaping tablespoons, however, I would recommend using what I use, and that's Great Value peanut butter. I used to use Jif all the time, but it's changed and it's more oily, which can affect the set up. Hope that helps.     What size pan did you pour the fudge in and was the parchment buttered? I’ve been making this fudge learned from my mother. This is real Fudge not that creamy stuff. LOL

    I've heard that before, too, Nancee, but it's not necessary with our recipe. All I know is I've been making this for around 30 years, and it always turns out. I try to be very step-by-step in my videos, which is why they're too long sometimes, but I want whomever makes this to have success.

    Hi Natale 👋 No, we don't find it necessary. We just want that creamy, fudge-like texture. Seems it glosses a bit no matter what, but we don't mind. Hope you try it and enjoy it.     Thanks Val and wish I would have had this done before we sent your box out. I think you'd like it lots. Yes, I'm still awake. I just can't fall asleep, even though I'm very tired.     I followed the Hershey recipe twice, and it hardened as I was getting into the pan. I wonder why they have you wait until 100 degrees to put it in the pan. I like how yours poured in.

    Hi pain, and thank you. I don't know why Hershey recipe states that, but honestly, I feel that using candy thermometers can just be confusing. As I always say, put burner on high just long enough to bring it to a boil, then immediately reduce to medium and boil 5 minutes, at which point I so the softball stage and if I get the soft ball, I remove it from heat and add my last ingredients. Sometimes, these places make it more difficult, and it scares people off. I hope you had a nice Christmas and have a blessed New Year.     Hi Brenda. It's a bit of both. The outside has the traditional "bite" in fudge, but also melts in your mouth. It's definitely a fudge you cut and not spoon lol Hope that helps. Merry Christmas 🎅 🎄 🤶

    Hello friend ❤️ the reason I use a skillet is so the heat is more widely disbursed. Takes less time to reach that soft ball stage I look for. Hope that helps. Merry Christmas 🎅 🎄 🤶

    Hi Mary, thanks for the comment. If you want the better results and taste, you'll use margarine. We have made it with real butter before and trust me, it wasn't as good. ❤️

    Hi Marcus (haha, I remember that show) 😄 Anyway, I've been making this for years. If you cook over medium high heat (I believe I show the burner temp on video, I'm not sure, but yes, five minutes AFTER it starts boiling. You need to stir continuously. It's nice if you have someone who can help get the cold water for you so you don't have to stop stirring. Trust me, I wouldn't have posted it if it's not a good family recipe. I always try to give detailed instructions and show every step. Remember, medium hi heat, stir constantly. Once the boiling starts, set the timer. Hope that helps. 💕

    Hi Melissa..do you mean how long cook time? If so, you'll want to set the timer for 5 minutes at medium heat, stirring constantly. Be careful to not get burned as the chocolate will bubble.

    All of the instructions are in the video. Everything is explained out step-by-step. As far as leaving it out, it can be left out for a few days in an airtight container, or you can refrigerate it. If you refrigerate it, it needs to be covered to prevent drying out.     Hi Phoebe. That's a good question. To me, it affects the soft ball stage, plus it takes away from the glimmer of the fudge. Mu mom always did it this way, and sometimes Mama's ways are not to be questioned, lol. If you like buttered popcorn, then stay tuned for my next goodie coming up.     We can never have too much chocolate 😊 besides, my sis n law likes that added chips. Adding them last keeps them from melting all the way and gives thar extra yummy fudge bite. It's optional though. 🎄

I made peanut butter fudge, chocolate-peanut butter fudge, maple fudge, white chocolate raspberry, Mocha frappe fudge, snickerdoodle fudge, and not sure what others.     Hi Kristy. Don't panic. If it's too hard, you overcooked it by even a minute. You have to remember to reduce the temperature as soon as it starts to boil. If it's too hard, you can either microwave it at 1 minute increments with a glass of water in the microwave with it, so the fudge absorbs the steam (don't microwave a metal pan though. Put it in a microwave safe dish) or, you can put all the fudge back in the pan with 1 cup of water and let the fudge melt down completely and then re-pour it. If you'd rather use milk instead of water, that's OK too. Don't throw it out. Hope this helps. Let me know.

    That's not old fashioned fudge .. my grandpa use to use Hershey cocoa and milk n butter sugar all that in a pan . He never measured any thing he used a deep metal pan .he never added in chocolate chips.. this isn't even close to my grandpa's fudge ..
