No baking, no gelatine, no eggs, no cooking, only few ingredient and ready in no time. Perfect last minute dessert idea. Ready to serve straight away!
RECIPE:
Makes 10 mini cheesecakes
150g (10 pieces) Digestive biscuits (Graham crackers)
60g (1/4 cup) melted unsalted butter
200g (1 cup) soft cheese (cream cheese such as Philadelphia)
50g (1/4 cup) sugar
1 tsp vanilla extract
200ml (3/4 cup) whipping cream / heavy cream (minimum 33% fat)
150g (1 cup) fresh raspberries + 10 pieces for decoration
100g white chocolate
Can be stored in the fridge for up to 3 days or in the freezer in the paper cups up to 3 month until ready to serve, then decorate once you take it out the freezer and ready to serve.
