That super dry turkey would've choked me to death. You're supposed to take the turkey out before it reaches desired temp. Carry over cooking will finish cooking it without getting dry. I usually take out the turkey 15° under desired temp. I keep it securely covered. 15-20 minutes later, it's perfectly cooked and perfectly moist, tender and juicy. I brine my turkey the night before, too.
