crankshaft for that feels weird why not just slap these rubber connectors on ends of gear in fact, that way you can easily get 4 clicks per rotation and there's less moving parts which means less friction and thus more speed

That limitation is often the cable's maximum data rate rather than the computer or the mouse, however cheap mice like the once used in this video may also limit how many it can register due to a cheap microchip.
