"Green Onions" is an instrumental composition recorded in 1962 by Booker T. & the M.G.'s. Described as "one of the most popular instrumental rock and soul songs ever" and as one of "the most popular R&B instrumentals of its era", the tune is a twelve-bar blues with a rippling Hammond M3 organ line by Booker T. Jones that he wrote when he was 17, although the actual recording was largely improvised in the studio.
The track was originally issued in May 1962 on the Volt label (a subsidiary of Stax Records) as the B-side of "Behave Yourself" on Volt 102; it was quickly reissued in July 1962 as the A-side of Stax 127 and it also appeared on the album Green Onions that same year. The organ sound of the song became a feature of the "Memphis soul sound".

I had the great chance to see the legend Booker T years ago when Randy Bachman and Burton Cummings toured together at a their concert at the Center in the Square in Down Town Kitchener Ontario Canada years ago and Booker T did Green onions everybody cheered it was a night I will never forget

Every time I hear this song I see a yellow 32 Ford coupe and a black 55 Chevrolet driving up Paradise Rd at daybreak.....
For a song that was done in 1962 it was way ahead of its time

Footage taken from 7th April 1967 Stax Tour in Njaardhallen, Oslo, Norway
These guys were the heart and soul of Stax Records.

After hearing this song for over 40 years, it was today on Thur. May 4th 2023 is that i found out the the name of this song.

Yes, this song was released in 1962. But this footage wasn't from that year, as Lewie Steinberg was the original member of Booker T. & The M.G.'s. In 1964 or 1965, Donald "Duck" Dunn replaced Steinberg. This footage was from 1967 in Europe (probably Norway if I'm not mistaken). Great song to go with that footage nonetheless.

It's Lewie Steinberg. (Duck joined later.) It was actually Steinberg who proposed the name "Onions", and Cropper modified it to Green Onions.
Hands down the best song from American Graffiti.
