New England Baked Beans

I'm making Maine style baked beans today! You ask what makes them Maine style? We use Soldier beans not Navy beans as most recipes call for. A touch of my homemade maple syrup gives them a bit of sweetness. Thick molasses adds that deep savory flavor that we are accustom too in a New England, Boston Baked bean flavor. Soldier Beans, Salt Pork and Onions baked in a bean crock for 8 hours. The entire house smelt of goodness. There's nothing like home cooked food.

    I grew up on these! My mum grew around Ogunquit Maine and been coming to Maine my whole life. Love them beans!

    Good morning Edman, Taking a day off today from fishing. I'm having coffee watching 👀 you make beans. A real camp staple at the cabin. At the cabin I cook my beans on top of the wood stove 8 to 10 hours in a Dutch oven. I have never used Maple syrup In my beans but that does sound good. I use brown sugar. :) I make a pot of beans on Sunday and it's usually enough to last the entire week of ice fish. I bring it out to the fish house in a pint Mason jar and hot water bath it on the heater until it is hot enough to eat. You're absolutely right about the Maine beans and the salt pork. I too have tried it with bacon and moose meat different things. But it's the salt pork that I think brings it home. Have you ever tried canning your beans? It's very simple to do. I cook them halfway (Which would be 4 hours) whether it's on the woodstove or in an oven. Then I put the beans in a pint canning jar with a 1" cube of salt pork on top. Pressure can them at 10 pounds pressure for 90 minutes. Is absolutely great to take a pint of homemade baked beans out on the trail out in the fish house or out in my boat. Loved this video my friend all about Maine when you start talking about baked beans. :) Tom

    Hello Tom, I'm not too picky when it comes to beans. I will eat any type of beans made. My mom was a little Spanish lady that could cook with the best of them. Her Chicken, rice and beans were to die for. I have tried for many years to make them as good as hers but it's not going to happen. I have not canned beans yet. I think I will try now though. A mason jar with beans warmed in a water bath is a brilliant idea Tom, where have you been all my life? hahaha. One of my favs on the ice is breakfast burritos . Venison, eggs and cheese on a tortilla. I have been known to find a frozen half eaten one in my jacket some days later. Get chasing flags and forget about it in there lol. I hope Mrs Tom is well and you're enjoying the time with family out on the ice. Thanks again Tom! Edman

    Hi dixieman, thanks for watching and commenting. I don't boil them in the same water I soak them in. I rinse the soaking water a few times during the soak also. I made some Ranch beans the other night using pinto beans, they were so good. Video coming soon! Have a great weekend, thanks again Edman

    Hello Jason, Welcome. I bake them at 325, my oven runs hot though. so I would say 325 to 350 depending on your oven. Thanks for the comment! cheers!

    Hello dixieman, welcome!! It's a bean that is 3/4" long grown in New England since the 1800's. Its called a Soldier Bean because it has two red dots on each end resembling a old fashioned toy soldier. Also called a red eye bean.
