I've watched this video over a dozen times..I have never seen better Neapolitan pizza making. Superb dough stretching. Would love to know the dough's hydration %, its perfect. Nella is the best!
Had a chance to eat at Nella's this summer when I was in Chicago on a pizza tour and had a great time, her pizza was one of the best I had while I was in Chicago. Your video brought back good memories.
You cut the end of the videos too quick! We wanted to see what the finished pizzas looked like

We ive in Konya, Anatolia.my late mother used to open her dough in her hands, she used to fill one of her arms with a piece of dough and hit the bread board ahhh those days were full of tears while watching

Where I grew up in the 50's there was no pizza. Finally, a Chicago outfit opened a pizza parlour and we had pizza. It was hand tossed too. It was absolutely delicious.

@@ufounidentified Did Egyptians have take away?😂 The Etruscans, in Italy before the Roman Empire, made Focaccia, which for Italians is the true mother of Pizza. The Egyptians made what we call Focaccia and not Pizza. Did they use buffalo mozzarella and tomato? I don't think so. Why do you call Egyptian focaccia Pizza if we do not call our Focaccia Pizza?

This woman is the Horowitz of dough stretching. That slapping technique she does, after the initial dimpling/spreading of the dough balls, what the hell is that?? Never seen anything like it. It’s like magic. I think I’ll slow the playback down to see if I can see what she’s doing. But something tells me it won’t translate. She is just a master!

@@anafigueredo4745 what do you think is the % of water here? I guess its a little less - around 60%? because a higher hydration often leads to a harder / faster stretch. is that right?
