    You're Turbot is nice and firm.The Green Turbot from Greenland I get always turned to mush when cooking. Like Arrow Tooth.Stopped buying it.Whats the problem?

    Hi Nathan, Confit actually means 'to preserve' and not to 'slow cook'. Quite different.
