Re: Shapton polisher level stones---I fully agree that the stone give no feel back, however, it gets the job done but one must be confident in technique. I have ordered the Chosera 3000 because it will fill the gap from Sigma 1000, or my King 800 to 5000 Shapton Pro, then to same 8000, and finally to loaded, mounted strop. I am eager to feel the glory of the 3000 Chosers. Excellent review!

Hey love your videos and I appreciate what you’re doing here very comprehensive a lot of good information would you recommend the chosera 1000/3000 or 800/3000 I’ve been using the king 1000/6000 for over a year now but I really want a splash and go soaking has become an annoyance to me. Thanks keep up the good work.

Thanks to your videos I've decided to buy Shapton Glass 1000. Now I need a fine stone to polish and touch up knives and chisels during work, followed by a strop, so splash & go would be prefrable. Chosera is hard to get where I live, I'm considering Suehiro Rika or Shapton Glass 4000. What else would you recommend? Maybe Shapton 6k wouldn't be too big jump from the 1k? I need a stone which stays flat for a long time and can handle steel about 62hrc

Question: Hey Ricky! So the Naniwa Pro does not come with this little brick anymore, would you recommend I order this separately or is it not necessary? Also I kinda like the Chosera better purely because of the Japanese printing. Is the Pro really so much better in terms of performance etc? Thanks so much 👍🏼 Oh and knife reviews proposal: Goko Hamono and Teruyasu Fujiwara. Lots of debate on the latter - need you! 🙂

Great video as always. Very detailed info. I agree chosera 800 & 3000 are my favorite. Got the suehiro debado MD 200, 1000, 4000 and they are awesome. Naniwa has set a standard, only the good companies will keep up. Work sharp now has soaking whet stone, retails for $30.00 two sides 1000 & 6000 a good plastic base made to sharpen hunting blades. My opinion it has many similarities to chosera very worthy for a serious review. Not true to grit ratings. Still a great performer. Keep the videos coming.

Love your channel! I’m just getting into sharpening and purchased the chosera 3000 based on several of your videos. I have a set of whustoff ikons and one shun classic chef knife. Can I sharpen with just the 3000 or do I need a rougher stone as well? I’d like to start with just the one chosera while I get better at sharpening before buying more, but my knives have not been sharpened for probably two years other than regular honing. Would love any recommendations.

The Shapton Pro 5k is a highly effective tool, but you are right that it is not much fun to use. I believe woodworkers rate it highly for chisels etc, but there are probably better stones for knife people. Generally i'm happy going from a Shapton 2k to a loaded strop.

  • @jeffhicks8428

If you use it how it's intended, it's a great stone. It's a finishing stone. It's for Strop strokes only. The 2k is a sharpening stone. Grit ratings are somewhat arbitrary. You have to know what you're getting. This articular 5k can not sharpen a knife. Whereas something like a Suehiro 6k is a sharpening stone, that's barely finer than the 2k shaton. You only need 1 stone of each kind. So for Shaton, you have to choose, 5k, 8k or 12k. those are their finishers for that line. For the glass line it's 6k, 8k, 10k, 16k. For Chosera, the 5k and 10k are finishers. He's comparing a fine sharpener, which is closer to the 2k, to a finisher. Which doesn't surprise me because his ramble long winded videos are always full of errors and mistaken info. Hes biased toward Naniwa, likely cuz thats what he sells on his site. The more I learned the less I liked these videos. Seeing how errant info they're full of is annoying.

I've bought a chosera 3000 and it was delivered today. The stone has in the middle a point that is flashing in the light like a real mirror! Is this normal for this Stone? • @OperationNonsense

5000 grit stone is a polishing stone, it doesn't remove much steel at all, and it's not meant to remove much steel. because it's fine grit, it's going to feel extremely smooth, leading you to think the stone "doesn't give feed back". the fact is you cannot judge a polishing stone by the feel you are accustomed to using a medium grit sharpening stone such as 1000 - 3000 grit. it's not the fault of the stone, it simply comes down to the fact 5000 grit stone isn't supposed to feel the same as a 2000 grit stone.

@@Burrfection He means these, they are high end stones. 13000 grit shiageto from Kaiden The Kaiden 13000 is a hybrid of crushed natural stone and ceramic. This is a softer style stone that can create a crazy mirror finish on both kataba and ryoba style blades and excels at final polish on carbon steel yanagiba. This stone can be easily scratched, chipped or gouged by those with limited sharpening experience but is rewarding for those who have a little skill and patience. Go slowly and use shorter polishing strokes for the best results. Kaiden Sharpening Stones These stones are for the true professional and although good for ryoba style edges they excel for kataba style blades. We strongly recommend this stone for those with intermediate to advanced sharpening skills only. Super fast polishing power Long lasting Excellent feedback during the sharpening process Great end results- i.e amazing polish Instructions: Soak the 13000 stone for about 5 minutes before use or until the bubbles stop rising. Finding the right balance of water is the key to using this stone. N.B. Please do not soak this stone for long periods as it will degrade the stone. We recommend using this stone in conjunction with a sturdy rubber base. Dimensions: 210mm (L) x 75mm (W) x 24mm (H) - approximate stone dimension

Love your vids. A bit off topic but have you ever tried stroping/sharpening with diamond polish? Never tried premium stones but compared to the (coarse) budget one I have, I get great and fast results with it. Diamond polishing pastes can cost a fortune or be really cheap and come in 0.5-100+ microns. I just use the cheap stuff (from ebay china), and it lasts forever. What I do is appy a thin layer onto some smoth sanded hardwood and let it dry. Been using it for 10+ sessions without reapplying or cleaning and its still going strong. Think for regular maintanace a stone isnt really nessecary. If its totally dull you might want to use a coarse stone first. Would be great to see what someone that has tried various stones thinks of this method. I tried 40, 20, 10 and 2 microns and after 20 its plenty sharp, the finer ones give it a mirror polish but I couldn't really notice a difference in sharpness (Im by no means an expert in sharpening or with knives). Also what is to be considered is that the diamonds sink into the wood and only a part of them sticks out and gets used, so they act a lot finer then the grain/micron conversion chart would suggest.

Shapton Pros are excellent stones. Who cares about "hand feel". If it gives enough feedback to tell what the bevel is doing it's fine. And let's not forget the elephant in the room, choseras and Naniwa Pros have a proclivity for cracking if you look at them sideways. It happens far too often for me to be comfortable dropping the money on them. Shapton Pros give very, very crisp edges as well. The whole point of a sharpening stone is the edge it produces. I'll take crisp edges over a "luxurious" feel anyday. My last statement is that the Shapton Pro/Ha No Kuromaku lime is just as good as the Glass stones. Yeah I said it

If all I really want is a really really sharp knife (I don't mind not having mirror finishes), is a chosera 1000 and 3000 (along with a cheap 250 stone if I ever manage to knock a tip off my sujihiki or similar) enough for regular maintenance on Aogami Super steel? (~63 / 65 HRC). I've got a local offer for a Naniwa Chosera 1000 + a Shapton 5000 + a Naniwa Junpaku 8000 for 200$ for the lot, barely used. Should I go for it? On a side note: Anyone here know by any chance if the Zwilling Miyabi stones are just rebranded Chosera? I read they are "based" on the Choseras. Wonder what "based" is supposed to mean in this context.

Shapton does not have a 3K stones, and the Naniwa brand is known for lowering actual grit ratings. practically every Super stone and Chosera stone I have used have a polish that is higher than stated.

in the sharpening hobby people know you cannot compare the same grits to the chosera, on high gits. for a very fine shiny edge , and that is not necessary for a sharp knife. but for the most ultimate

I would personally go from the chosera to the shapton, I don't know why you are comparing a 3000 to a 5000, they are different grits.

The "feel" of the stone is something very subjective. But we can all see for ourselves which one gives a better edge, the knife sharpened on the Shapton has the superior finish, which is to no surprise considering it has a finer grit. Maybe compare apples to apples next time?
