Tomato Gosht ka Salan is a flavorful South Asian dish that combines tender pieces of meat (usually mutton or goat) with a tomato-based gravy. Here's a basic recipe for making Tomato Gosht ka Salan:
Ingredients:
For Marinating the Meat:
- 500 grams of mutton or goat meat, cut into pieces
- 1/2 cup yogurt
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
For the Tomato Gravy:
- 4-5 ripe tomatoes, finely chopped
- 2 onions, finely chopped
- 2-3 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Cooking oil
- Fresh coriander leaves for garnish
Instructions:
1. Marinate the Meat:
- In a mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
- Add the meat pieces to the marinade, coat them well, and let them marinate for at least 30 minutes. You can refrigerate it for a few hours for better flavor absorption.
2. Prepare the Tomato Gravy:
- Heat some oil in a heavy-bottomed pan or pressure cooker.
- Add cumin seeds, mustard seeds, fenugreek seeds, and fennel seeds. Let them splutter.
- Add the chopped onions and sauté until they become translucent.
- Add ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
- Add the chopped tomatoes, green chilies, and salt. Cook until the tomatoes turn soft and start to break down.
3. Cook the Marinated Meat:
- Add the marinated meat to the tomato gravy and stir well.
- Cook on medium-high heat until the meat changes color and seals the juices. This should take about 5-7 minutes.
4. Spice it Up:
- Add coriander powder, cumin powder, red chili powder, and garam masala powder. Mix well to coat the meat with the spices.
5. Pressure Cooking (Optional):
- If using a pressure cooker, add enough water to cover the meat and cook on medium-high heat for about 2-3 whistles, or until the meat is tender and fully cooked. Release the pressure naturally.
6. Final Touch:
- If you're cooking in a regular pan, add water to cover the meat, reduce the heat to low, cover the pan, and simmer until the meat is tender. This may take 30-45 minutes, and you may need to add more water as it cooks.
7. Serve:
- Garnish with fresh coriander leaves and serve Tomato Gosht ka Salan hot with rice or bread of your choice.
