Oh my goodness. Ok, I've been in Europe at least 50 times and have given beer tours for over 45 years. (I grew up in Milwaukee) The large foam on a beer usually means it's naturally fermented and not injected with carbon dioxide like most American mass produced beers. CO2 is created in the fermentation process of beer. Most beers their drinking are Lager beers which mean their bottom fermented vx. Ales which are Top fermented. When in Germany or the Czech Republic they want foam which is made naturally. The reason is flavor. Most beer glasses in these countries will have a line near the top which indicates a certain quantity of beer like .5 Litres etc. The beer will be poured to that level and the glass finished off with foam. College students for the past 50 years want no foam because they think the bartender is cheating them of a full beer. An indication that they don't know anything about quality just quantity. The foam on the side of the glass by the way is called Brussels Lace and another indication of a beer that was naturally fermented. I'm in for the taste and in in Germany and the Czech Republic you'll get the best tasting beer in the world if you just take a little time to understand how it's brewed and why. Na zdraví and Prost!!!!

Foam in a beer is dependent on the malt type, some malts improve beer foam which is desired in a quality beer. All beer is naturally fermented by law, but not all is naturally carbonated, including Czech beers. Some beer bottles can be naturally carbonated, but you always need a CO2 tank to pour beer on tap. Most exciting brewing trends and novel beers happened in... the US, and Czech breweries showcase american beer styles like NEIPA's, APA, milkshake IPAs, pastry stouts etc.

I have been a bartender in 4 counties. Having been bartender in north America and Europe, I have to agree with your sentiment surrounding head! North Americans think you pour a terrible beer if it has some head, in Europe patrons will send it back if there isn't enough head 😂

People don't like the "foam" because they don't understand it's actually still beer (if tapped/poured correctly of course). In a traditional Pilsner, even if you get a half liter full of just foam, it's actually about 0.3 liters of beer. Foam has to contain quite a bit of liquid. Also, those people do not understand that beer reacts with oxygen very very fast and the head serves as an isolation of sorts, basically stops the beer from oxidizing. Why do you not want your beer to oxidize? Because it rapidly changes the taste of the beer and believe me, it's for the worse. Most people kind of know this, because they have left their beer standing before and know that it does not taste that good after a while, but still kind of don't get it.

I would argue with the fact that Janek visits The States quite often, he has relatives there. He goes to US multiple times a year. I do think though he was referring to more of a stereotype that we think American beer is bad, because we compare our huge breweries and US huge breweries. But obviously small and craft breweries are really good. Here in Czechia we are also starting to get into craft beer. We have been since the last 10 years. But many people still only know lager style beer
