Thailand has the best street food. I might be biased. They have huge access to ingredients, it’s catered to tourists, it’s cheap, and they don’t care about mixing cultures and flavors.

no, they are pure steel pan. after purchased they will apply a none stick technic. it's a one-time process by glazing the whole pan with cooking oil then burn it under very high heat till it turned red. then finish the process by cleaning it with cooking oil. the 2 shade you saw was the wear n tear. none of pans in these clips are tafflon coated. Except the one from 1:06 to 1:12. ;(

I Like Street Food

T, your correct ,after cooking if the shellfish hasn't open don't eat it. At my table once a chef came over to see how every thing was hee noticed we had 4 clams that did not open, the chef left and came back shortly with a new order. He said he was sorry that plate should not have left the kitchen with those bad clams. We go back to that restaurant frequently because of that chef.
