To Make MSG solution simply dissolve 10g MSG Into 90g Filtered Water

2oz (60ml) Gin
1/2oz (22ml) Olive Brine
1/4oz (7.5ml) Dry Vermouth
4 dashes MSG solution
MSG Tequila Pinapple Sour
2oz (60ml) Tequila
3/4oz (22ml) Lime juice
1/2oz (15ml) Pineapple
1/2oz (15ml) Agave
5 drops 10% MSG solution
Gordon’s Breakfast
2oz (60ml) Gin
6 lime wedges
3/4oz (22ml) Simple Syrup
4 Dashes Cholula
2 Dashes MSG Solution

    Good stuff. I will say as someone who cooks with MSG almost daily that: 1. A little bit goes a long way, and you can overdo it. 2. It is generally not a good idea to use it as a 1:1 substitute for regular salt. When cooking, I often cut my salt with a small amount of MSG to get the benefits without going overboard. Adapting this for drinks, I make a 20 percent saline solution, where 17-18 percent is salt, and 2-3 percent is MSG. Then I use it as any other saline solution.

    The recipe for grapefruit super juice includes MSG to replace the glutamic acid. Kevin Kos goes over this in his video. Love the idea of using it instead of saline solution, very original idea

    Nice side-benefit of the sub of MSG for Worcestershire is that it makes the cocktail vegetarian or vegan friendly! Since, as you mentioned, Worcestershire has fish in it

    Nice spunk today Leandro! Thanks for the history and level talk on MSG- I've long been suspicious of the dubious claims- and I'm highly critical of all foodstuffs normally. This addition makes sense. I even add double salt to my homemade cc cookies! I'll try this in a Bloody Mary just to see if I notice...

    Good use, I'm never running out of the bottle of MSG I have but this will help. I do like a little bit of saline in my margaritas since I can't stand rimming glasses, very interested in trying yours next time!

    Great video as usual. Did you see the list of the world's 100 best bars released yesterday? So many of those bars are doing new and crazy awesome things with new ingredients, whether it's reducing citrus wastage (plus the air miles they build up) and developing new flavours to go with spirits.

    Did you consider doing a side-by-side comparison with and without the MSG? I think that would make it a lot easier (and more reliable) to detect the specific changes due to the addition.

    MSG is great! Using it, and also acids (lemon, vinegar) can really help a lot when it feels like something is missing. Hot take, msg fearmonging is because xenophobia and anti Asian sentiment. I'm sure someone could write an essay explaining why, and ik there are definitely some videos about it, but a KZread comment doesn't feel quite worth it for me. Only thing that can cause headaches that is known w/ MSG is the sodium, treat it like salt, e.g. make to drink water, and you'll be fine.

    It's very telling that it's not a thing with Italian cuisine, given the batty amount of umami and glutamates happening up in there. Italian and Chinese food are both legendary because they learned a lot of the same lessons in flavor with what they had available.

    Well, if msg causes headches why in china and japan there isn't a huge increment in headaches? beside, msg is present in high quantity in many other products, like parmigiano, tomatoes or spinach, (and also since it's an aminoacid it's present in every animal protein and derivate like broth and so on), in short, there is no reason to fear msg if you don't exagerate, just like most things. Btw, i'd like to see some gin cocktails made with non london dry gins, if possible

    I was wondering about this when watching you use saline solution. I make up "turbo salt", which is 90% sea salt, 10% MSG, which I use everywhere I would normally just use salt... I could make a turbo saline solution. Maybe worth a test, straight saline, straight MSG and turbo saline solutions.

    I'll have to play around with msg a little. It sounds like it could be substituted for orange bitters in a Dry Martini where the garnish is an olive (but not where the garnish is a lemon peel), and your use of it instead of Worcestershire sauce makes me think it could add value in a Bloody Mary.

    Great video, Leandro. I will probably try to experiment with it. A question: Why does it have to be filtered water for the MSG solution? Can’t you just use regular tap or spring water? Do you have to use filtered water when you make a saline solution too? Fun fact: In Danish, MSG is called ‘The Third Spice” (salt and black pepper being the other two, although they’re just called ‘salt’ and ‘black pepper’ in Danish, not the 1st and 2nd spice).

    Yeah I just use filtered water because that what I like to consume plus there are some off flavors in my local tap water due to the presence of chlorine and other such “purifying chemicals” if you’ve got great tap water then use that for sure

I will just use tap water then, like I already do for syrups. Please keep up with the always inspiring and informative videos!     Hi Leandro! The reason why you felt "chicken soup" in the 1st and 3rd drinks is that both of those contained salt (1st the olive brine, 3rd the hot sauce). I recommend you to try this: If you take a tablespoon of water and sprinkle a few crystals of MSG in it, it will taste horrible but if you add just a pinch of salt, they react somehow, and that tablespoon of water will taste like chicken broth. Odd and really cool at the same time. It would be interesting to see MSG in a cocktail that has no salt and no citric acid in it (like a regular Martini, Manhattan or Negroni), to see if it does anything or it makes the drink taste as disguisting as it does with a tablespoon of clean water.

    I mean MSG Stands for monosodium glutamate and I tasted the solution outside a cocktail and it just tastes savory. Not terrible at all. Also there is Sodium in MSG so really it already contains salt

    Blanco tequila's got savory aromas and flavors, so I think MSG would be a perfect addition! Olmeca Altos in particular is VERY savory.

    Hey Leandro, love the show, and this is a super interesting innovation! I hope that the over-the-top presentation around MSG was just a nod to Weissman, and not something that'll happen consistently. I stopped watching him because he went so far into the meme territory that I couldn't enjoy his actual cooking anymore, and I'd hate to see this channel go that direction.

    I've been using MSG in cooking, it's really easy way to add umami to dishes, but never thought of using it for cocktails. Edit: Just thinking out loud more, if the basic flavors are salt, acid (can be added to food easily with citric acid), sweet (sugar), umami (mgs), then what kind of spice would add bitterness? Also isn't hot one of the flavor as well, it an be added with pepper.

    I'm autistic and added MSG causes me migraines, dry mouth and tachycardia and a general bad mood. I've stopped eating things with added MSG, such as chinese fast-food (which I love) and some frozen french fries.
