there is no difference, you can use any color really but because human skin is close to red we are limited to blue and green screen when keying out people. Using blue or green is a matter of choice but each has its own advantages, green is way easier to key out and cheap while blue keys better in low light

Many. Nuke for compositing, Houdini for effects, Maya for modelling and animation, fusion for 3D stereo camera, and many more.
