Moroccan Street Food: Maakouda (Potato Croquettes)/ معقودة

This is the street food I grew up with. It's more than food to me and many moroccans but if you never had it, this is a fantastic potato croquette recipe, served in bread with a special sauce. A true, delicious, carb bomb that will satisfy your taste buds and put you to sleep all at the same time !!!

Maakouda:
• 500 g Potatoes or roughly 1 pound
• 1 tbsp of Lemon Juice
• 1/2 tsp of Sea Salt
• 1/2 tsp of Black Pepper
• 1 tsp Cumin
• 1 tsp Turmeric
• 1/2 tsp Paprika
• 1.5 tbsp of Chopped Parsley
• 2 Crushed garlic cloves
Batter:
• 1 cup of All Purpose Flour or 175g
• 2 tsp of Baking Powder
• 2 tsp of Vegetable Oil
• 2 tsp of White Vinegar
• 1/2 tsp of Sea Salt
• 1/2 tsp of Paprika
• 1/2 tsp of Turmeric
• Water to consistency
Tomato Sauce:
• 2 tbsp of Tomato Paste
• 1 tbsp Olive Oil
• 1 tbsp of White Vinegar
• 1 tbsp of Water
• 3/4 tsp of Sea Salt
• 1 tsp of Cumin
• 150 g of Tomato Purée or roughly 5 oz or about ½ a Can
Tomato & Red Onions:
• 2 Average Tomatoes
• 1/2 of a small red onion
• Pinch of Sea Salt
• Pinch of Black Pepper
• 1.5 tsp of Moroccan Vinegar (Or White Vinegar)
• 1.5 tsp of Olive oil

    I'm german and watching from Germany. I made this for my Moroccan husband today as a surprise.He's originally from Meknes and he was very happy with the result. He said it tasted authentic and very delicious. Thank you for the recipe. I will try the other ones from your channel as well 😊

    I am literally about to cry Subhan’Allah! I struggled with authentic Moroccan recipes for 2 years now! I used to watch all kinds of cooking videos in Darija and French,barely understanding any of those languages… I am going insane over the fact that I didn’t know about this channel until now🫣 May Allah SWT bless you khoya for your efforts!

    I was born and raised in Casablanca (And yes, never ever had Maakouda there). It took me 18 years to be introduced to it during a short visit to Meknes at the illustrious Moulay Bba. Now, since I moved abroad, it has become one of my go-to treats that I often like to make. P.S.: We were once short on Harissa and accidentally discovered that it tastes AMAZING with Buffalo sauce 😅

    I’m from Casablanca I had it many times and my mom makes it for us too now even I live far away I’m at Orlando Fl I enjoyed from time to time by making it I wish I have any Moroccan place to go eat them but there aren’t I’m very happy to have ur website by just looking in KZread really you doing great job by explaining everything like it should be Good luck

    Damn, that is hard core. Looks amazing. What do you do with your oil when you're done using it for deep frying? Does it spray all over the place while you're cooking with it?

    I save it and you re use it again. Regular vegetable oils can withstand at least two rounds of frying. There is definitely some splashing but if you don’t need to film like mine, you can use a thin but deep pot. Which saves on the amount of oil and reduces the splashing 😊. I miss you guys also 😊

    You can also stuff each individual one with cheese or meat and eat them as is 😊. No bread required 😄

    I made a horrible cooking mistake yesterday. I tried to make breadcrumb battered potato balls with cheese in the middle. Oh, how horrible they were! What went wrong? Who knows, but the outside was like a rock. I'm coming back here to make a proper batter for my leftover potato mixture because this recipe is the best. Thank you for rescuing my potatoes 🤣🤣

    @@KuzinaWithSimo Half all purpose flour, half cornstarch, teaspoon salt, mix to a consistency like your batter, dip in breadcrumbs, fry...it was seriously horrible!

    @@happydillpickle Maybe too much flour or starch if it comes out hard. But I got to say, batters are very finicky. It's so easy to mess them up :D. Save the rest please 😂😂😂

    @@KuzinaWithSimo Haha I think it must have been too much starch, or maybe because I used panko breadcrumbs that my sister bought me- they're very crunchy. I was laughing about people using these expensive breadcrumbs instead of just making their own, so she posted me a packet of them and usually they are fine, but not in this batter! I usually make jilebi with this 50/50 mix flour and starch and they turn out delicious but then I do add yogurt and baking soda. Oh well, we cook, we learn!

    @@happydillpickle I love panko, but I guess you could also just my batter and as a last step, a quick dip in panko. But I like where you are taking this with cheese and panko 👌🏻. I approve 😂

    It’s my childhood favorite street food. It’s probably the same for many Moroccans. Maakouda is delicious and cheap. We use to be able to have it in every neighborhood.
