Old North Carolina Moravian Cookie Recipe:
1 1/4 cups sifted all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
1/4 teaspoon ground cloves
3/4 teaspoon cinnamon
1/2 teaspoon ginger
pinch of cayenne pepper
3 tablespoons melted shortening
2 tablespoons dark brown sugar
1/3 cup molasses
Use 2" cookie cutter, bake at 350 degrees for 10 minutes on stainless steel pans
Sweeter Version of Moravian Cookies:
1 2/3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
6 tablespoons butter at room temperature
3/4 cup of sugar
1/4 cup molasses
1 egg yoke (large)

    I am from Winston-Salem, North Carolina. My grandmother was a somebody in the arts and theater community so she had many friends and acquaintances who worked in the Old Salem area. When I was a small child, we went there every year at Christmastime. We walked around the old Moravian village and ended up in a place where we sang carols and had cookies and hot chocolate. It seemed so cold and it was so warm there! (This was before I learned what cold is!) Then we always went home with a few boxes of Moravian Ginger cookies at the bakery. My grandmother doled them out sparingly but I remember we got to eat some on Christmas day. We also had a Moravian star on the front porch. I am told it was not easy to put together and hang but my grandmother (who we lived with) would work at it until it was done. It had many different points of various sizes that had to be put together just right to make the star. I heard her say a few "bad words" when she was putting that thing together so I don't doubt it was hard for her to put together. Wonderful memories (even if they are fuzzy with time)! I found a recipe found a recipe in a cookie cook book when I was in my teens. I was determined to make them. I remember rolling them was not fun. I also remember they were not thin enough and my Mother (who didn't make any of the Christmas cookies) criticized them terribly. I don't remember if they tasted good or not anymore. I was pretty crushed and it was the last time I tried to make them! The video makes me want to try again! So maybe I'll try again closer to Christmas and see how they go.

    Thanks Susan, I deserved that because the cookies were very hard to make. My husband now has a good supply of Moravian cookies, those from Saturday and those from Monday. I like the ones I made Monday and he likes the ones made Saturday. Saturdays were sweeter and thicker with a little more heat. Thanks for commenting, Phyllis

    I made the Old North Carolina Moravian cookies today and they turned out amazing! I am a baker for years so I knew the challenge of making a cookie that is roll out and very thin. I did not melt my shortening and I used Saigon Cinnamon instead of the cayenne and regular cinnamon. I also used the mixer from start to finish, starting with the creaming beaters and ending with the dough beaters. I also did not refrigerate the dough. The trick to these tasty morsels is patience and a metal scraper. I used a good amount of flour on the counter and rolled the dough gently and carefully. After I used the cutters I made sure I had a little flour on the edge my metal scraper and simply shoveled them up and onto a parchment lined cookie sheet. CAREFUL when baking ... I only needed 6 min to bake! I'd love to share a photo, but, I don't see the ability on this comment section. Thanks so much for making and sharing this video Phyllis.

    Phyllis this is the recipe from Old Salem Moravian cookies Moravian Cookies In the 1950s and 60s Edna Spach and Pearl Edwards made and sold Moravian cookies in the Winston-Salem area. Both were members of the Trinity Moravian Church. This recipe first appeared in The Old Salem Museum and Gardens Cookbook. Note: This recipe makes a LOT of cookies - feel free to halve, or even quarter. Ingredients ● 1 quart molasses ● ¾ pound brown sugar ● ¾ pound shortening ● 2 Tbsp ground cloves ● 2 Tbsp ground ginger ● 2 Tbsp ground cinnamon ● 2 Tbsp baking soda ● 3 ¼ pounds flour Directions 1 In a heavy-bottomed saucepan, heat the molasses, brown sugar, spices, and shortening over medium heat until the shortening is melted and the mixture is uniform. Do not let it scorch! 2 Add the baking soda and mix well until it is dissolved. The mixture will be very foamy. Remove from the heat, pour into a large, heat-proof mixing bowl, and let cool to room temperature. 3 When cool, add the flour. Mix until the flour is fully incorporated, roll into a ball, wrap tightly in plastic wrap, and refrigerate overnight. 4 The next day remove the dough from the refrigerator, preheat the oven to 325 F, and prepare a large cutting board or counter top by sprinkling liberally with flour (flour your rolling pin too). Line a cookie sheet with parchment paper. Cut off a fist-sized chunk of the dough and return the rest of the dough to the refrigerator while you work. At this point it is important to work quickly while the dough is still cool. Roll the dough until it is uniformly thin - ¼ to ⅛ of inch thick; don’t be afraid to use more flour to prevent the dough from sticking to the board or the rolling pin. Cut out the cookies using whatever shape cookie cutter you wish, gently brush off any excess flour with a pastry brush, and place on the parchment-lined cookie sheet (a thin spatula will help to move the cookies). Bake at 325 F until barely browned around the edges, 7-10 minutes. 5 Repeat the process with the remaining dough until all the cookies have been baked, remembering to work quickly and keep the dough chilled. The dough keeps quite well in the freezer, so you can roll out the sheets and freeze them for up to 3 months for future use. Just remove from the freezer and let rest at room temperature for 5-10 minutes before cutting; bake as directed above.

    I live 5 minutes from the Mrs. Hanes cookie factory and go to church with the Hanes family just up the road at Friedberg Moravian. They are a small business but they stay super busy year-round because they ship all over the world. Really wonderful, humble Christian family. Their recipes are all old family recipes that have not been tampered with. They are the real deal. Most people like the spice (ginger) cookies but my favorites are the sugar cookies and black walnut cookies. Mrs. Evva Hanes is also a wonderful cook and has published a couple of cookbooks which you can buy on their website.

    I used to make cookies for extra $$$. I did it for three years during the holiday season. They were all cut out and decorated. The last year I made a total of 5,000 cookies. They are not my favorite thing to make -one regular oven and four cookie sheets. A lot of work !! But people really enjoyed them!

    Thanks Phyllis, I had never heard of Moravian Spice cookies. I did see a Moravian Church one time though in St. John U.S. Virgin Islands, but I did not go there because I had never heard of it before. Later I found out that the church would have been OK for a Christian to attend. In fact, it was Moravian pilgrims that had an influence in the life of one of the Wesleys. I can't remember now if it was John or Charles, but I think it was John. He was impressed with their Christ like approach to life, and their demeanor.

    I’m from Winston-Salem, NC. My grandmother, made and sold these cookies in the 50’s 60’s and 70’s. Yes, they are very hard to make, but well worth it. She had a board with fabric to roll them out on as you said. Brings back great memories. Thank you for sharing. Your hard work. Faye

    I'm so pleased! For days I've been trying to remember a word you use that I've never heard. I had told my husband and daughter about this, but couldn't remember the word for the life of me! (We are northerners living in Washington state. I'm guessing this is why I've never heard the word before.) I was unable to remember which video of yours I had heard it in, and had finally given up on remembering. Just now I clicked on this video, and you said it right away! Hurray!     Phyllis (the 'Magic Baker/Cook'): What about Crisco-painting a sheet of parchment paper on the bottom (to bake on) and Crisco-painting wax paper top sheet (to roll with) along with both sheets floured? If you use parchment paper on the bottom you could just slide the sheet onto your baking pan and reuse it on the next batch. You can reuse parchment at least 4 times for cookies. Just a suggestion.     A bean masher works well to mix these if you don’t have a heavy duty mixer. I also use a tortilla press to flatten the cookies paper thin. 💞🙋🏻‍♀️

    Phyllis, I'm a fan! I'm going to try to make these wafers substituting a couple tablespoons of the flour with a couple tablespoons of cornstarch which should make the wafer lighter and more delicate than all flour. I will let you know how mine turn out. Thanks for sharing all of your videos. When I want something like lemon meringue pie I want the old fashioned recipe like mama and grandma used to make. Yours is just like mama's and grandma's pie. Can't be beat!

    Phyllis, You can bake them right on the wax paper on a cookie sheet. I don't think I would try it on your new pans. But for years we have always used wax paper, before they sold parchment paper. I still do, it's cheaper.

    Yep... you have it right this time. We still have a group of Moravian folks who live in the western part of NC. They sell their cookies during the year to specialty stores and hometown grocery stores. At Christmas, they have a large kiosk open in one of the big malls in Raleigh. My best friend and I try to go every year just for the cookies. Our favorites are the spice, lemon, and sugar.

    Kathy, I saw that video too. They also put icing on them. I like the ones that are super thin. I think that video you mention put blue cheese, walnuts and then drizzled with honey. I might have to try that since we now have about 75 Moravian cookies. Thanks for commenting, Phyllis

    I'm assuming that the garden has been cleaned up? Moravian cookies made twice. He must've done a really good job! Loved watching you do something that I know I will absolutely neeever do!!! You must really love him for all this work. Mine's crazy about sugar cookies. It's a good thing too.

    Yes. I placec a small ball of dough right on the parchment, moisten the bottom of a glass with water, then flatten down the cookie. It works perfect for thin cookies!

    Years ago I found a recipe for Lace Cookies...they are tiny, crispy little treats..made with Quaker Oats, Quick...not instant..you probably already heard of these or made them but I wanted to mention them because they are so amazingly good...you can get addicted...the recipe is in a wonderful cookbook Mrs Whaley Entertains....she was from Charleston...the book is fun to read and the recipes are very good...

    I like the idea someone below mentioned of flattening a small ball of dough with a tortilla press. I'd put the dough balls between small squares of parchment paper, then just peel off the top layer and put the flattened dough and bottom square of parchment paper right on the cookie sheet and pop in the oven.

    Well Phyllis, I laughed a little when you said people make these for Christmas gifts. I'm not surprised. Once a year is probably enough...what with all the work you put into making them. If you get these cookies, (biscuits) know that the person you got them from, must like you a lot. 😂😂😘 A very interesting recipe and I love the crunch they made as you bit into it. I'll be trying this one out for my pest...er beloved. Hehe. X

    Mrs. Phyllis I know they wouldn't be a traditional round cookie but when just for you and buckle couldn't you, once the dough is rolled out thinn using a knife just cut horizontal and vertical lines and have squared cookies instead of taking time to have to peel away all that excess dough?

    Roll them.between two sprayed or oiled/buttered parchment sheets And cut in squares or lrg squares then triangles. Much easier as I have making roll our cookie cutter Anything lol.... You can do this with biscuits also... I also use a pasta press for some doughs lol...

    Funny how the southern Moravians did cookies, while the northern Moravians did Sugar Cakes. We are in the throes of Sugar Cake baking right now. I can't make them anymore, but my husband does about 50 of them each year to give away.

    Sounds like something I'd love to try. If I can make croissants the real thing which the recipe I found takes 2 or 3 days to make bit boy are they good we ate the whole thing of croissants in one day. So I well try this. I like the challenge. I make my own tortillias so another challenge. Thanks for the video.

    I'm an American living in Norway and they do not sell Molasses at the grocery store. I finally found it but it's at the feed store but I would have to buy a 5 gallon bucket of it. I know that I could never use so much of it, so I've been looking for recipe that might use something else instead. This recipe that your using is similar to a Christmas cookie they make here but they use a dark syrup.

    I make ginger snaps but they are easy. These remind me of the windmill cookies my mom always bought. They look like they are made in a pressed cookie.

    I wonder if when you roll them out if you flip the wax paper and peel off both sides of the wax paper (one side at a time) and lightly dust the paper and spread it around really good before recovering the dough. that way you have loosened the wax paper from both sides before cutting the cookies. also have your cookie sheet in the freezer before freezing the dough.

    Phyllis, I think you would have much better luck cutting out those cookies if you had a floured cloth board . I think that is why the bakery that makes them do not have problems picking up those cut out cookies. Just look for one of these cloth boards that you can sprinkle the flour unto , and with hands spread out the flour well on that board...then roll out cookies. Just a thought :)
