Appliance installer here. Decent video. Should also show how to unbox the unit, take off the pallet, and safely move the appliance. Also, this video is out of order. The leveling must be done before securing it into the cabinet opening with screws. Another point, you want to align the side flanges of the fridge to the cabinetry and not necessarily to plumb.

Still don’t understand the brackets, how does this keep it from tipping? We don’t have a soffit, so what do we secure it into on top? The cabinetry filler?
