Mom's Chicken Tetrazzeni
Recreating one of Mom's early dishes. This was very tasty! The mild flavors of the mushrooms and celery worked wonders with the white sauce and chicken. This freezes well.
Ingredients:
1 box (1 pound) linguine noodles, cooked and drained
1-2 cups plain bread crumbs
To really amp it up, mix these wiith softened butter
For the white sauce:
6 tablespoons salted butter
6 tablespoons all purpose flour
3-4 cups half and half
1 teaspoon salt
1 teaspoon nutmeg
For the chicken mix:
2 pounds chicken breast cut into 1 inch cubes
4 stalks of celery sliced thin
16 ounces mushrooms sliced thin
2 tablespoons olive oil
Directions:
1. Prepare pasta al dente (about 10 minutes) and drain. Set aside.
2. In a saucepan, melt butter over medium heat being careful not to brown it. Add flour and stir in until mixed. Add half and half, salt, and nutmeg and mix well. Stir regularly and heat until bubbly.
3. In a large skillet, heat oil over medium high heat, then add cut up chicken. Sautee until most of pink is gone (don't let it brown). Add celery and stir to mix together. Sautee another 2-3 minutes. Add mushrooms and mix together. Cover skillet with a lid to let the mushrooms sweat down a bit--another 3-5 minutes stirring occasionally.
4. Add cooked pasta to the skillet and mix together. Pour in half the while sauce and mix, then add the other half and mix until all is incorporated.
5. Pour mixture into a 9x13" casserole dish and spread evenly. Cover the top with the breadcrumbs.
6. Bake in the oven at 325 F for 30 minutes.
Lessons learned:
1. More sauce is better. The noodles and breadcrumbs will soak up the sauce.
2. Mix softened butter with the breadcrumbs for some extra richness and to cut down on the dryness.

Have to agree with RMR, mushy pasta is the WORST! When I make baked pasta dishes, I cook the pasta a little less than al dente, then add it to the rest of the dish and bake. Pasta is done perfectly! Enjoy the show with your two best girls, Colonel!
Always do what your mother did It will not fail. Yours look like it will become dry. Always add butter to dry crumbs Loved your mom so much. She was real. Mr. Bucky was special as well ❤❤
My cousin's mother-in-law was German and she used to add nutmeg to her mashed potatoes. Anyhow, if you add a little oil to the noodles after draining them, the oil will "waterproof" them and they won't end up mushy when they're baked.

Looks delicious! And i fully agree with your nutmeg choice when it comes to cream sauce. Yummm but a piece of advice is that ground nutmeg tastes more “pumpkin spice” than getting an actual nutmeg nut and grinding a bit with a stick grater. It’s oddly a whole different thing. The actual nut is more earthy than pumpkiny. Give it a whirl!
I have made Miss Phyllis Tetrazzeni...in fact that is what we call it...and it is amazing. It's my daughters most requested meal when she visits. I also add more mushrooms but I have not tried nutmeg. Will add it the next time and see what we think. Hope ya'll are having a great weekend. I bet the show was good. I do recall, on your mom's previous videos, she added a dash of nutmeg to some of her dairy based recipes. She said you won't taste it but it enhanced the flavor of whatever dairy she was using. I believe one instance was in her beautiful onion pie.

Looks amazing!!! Mouth watering! I like a lot of chicken too. Always made it with Nutmeg but I need to try it with celery. Instead of the bread crumbs I use shredded Parmesean Cheese. Great recipe!! Stand by 1!! Lol. Always love that. Hope to see a video with Bella❤❤

Do yourself a favor and get whole nutmeg and grate it. You can use a zester, the rasp thing. Makes a world of difference in flavor and since it's whole lasts forever.
I stop in and watch when you do something from your Mom.. I enjoyed all your experiments in the crockpot also..

Looks delicious. I use to make dishes like this often, but had to cut out all wheat (grains)… Still looking for a substitution for the noodles..(keto)

He does what I do when I have something on the stove , he waves the steam that arises from the food towards his face ( this way no loose hairs fall into the “ dish” one is cooking. ) I know what you mean about the mushrooms. Not long ago I read an article that said be careful with pink salt as it has been discovered there is some on the market containing mercury. Do your own research. But I decided to switch to Celtic and Redmonds just to be sure.

Some people are allergic to nutmeg if you have guests over. Let them know its in the ingredients .. I wouldn't expect that in a pasta dish.
Probably should have “cooked” the flour after adding it to the butter. It should have bubbled for a while! It gets rid of the flour taste… I can’t stand the taste of flour in my sauce which is what yours should have tasted like! Try it again and wait until your flour butter mix bubbles for several minutes. I really miss your moms videos & I’m so thankful you picked up the reins and carried in…
