Mixed Berry Galette

This is the perfect recipe for getting in the summertime mood, fresh berries on a sweet & buttery crust. Top with ice cream if you’re really feeling summer-y! Truly, this comes together so quickly so even if you’re in rush, you can make something stunning & delicious.
RECIPE:
3 cups fresh mixed berries
2 Tbs granulated sugar
2 Tbs corn starch
2 tsp lemon juice
1 sheet pie dough or puff pastry
2 Tbs heavy cream
raw sugar, for sprinkling
1. Line a large baking sheet with parchment paper. Preheat oven to 375° F.
2. In a large bowl, stir together the berries, granulated sugar, cornstarch and lemon juice. Place prepared dough on parchment paper. Roll into a 10-inch to 12-inch round. Pour the berry mixture into the middle of the crust. Spread the filling to 1 1/2 inches from the edges. Working clockwise, fold the edges up around the filling.
3. Brush the edges of pie dough with the cream. Sprinkle crust with raw sugar. Bake for 30 to 40 minutes. Remove from oven. Let cool for at least 15 minutes before serving.
