Look up "signal to noise ratio" ... basically what you want is to record with your synth output as loud as possible without clipping. "Correct" volume is key here, so don´t try to apply any mixdown before recording, mix it afterwards. What you aim for is maximum "distance" between your signal volume and the noise floor ... most of the time you won´t need to remove the noise floor from the recording at all that way. There are also videos here on KZread, that discuss and compare the noise different interfaces bring with. If you can use a low noise one ... cables don´t make any difference unless they are really really cheap crap.
