Ready in minutes❗️A perfect idea for Basboussa carrot and coconut cake without white flour Easy and quick recipe
Ingredients
2 carrots (about 200g), 3 eggs., 100g of vanilla or plain yogurt, 100ml of oil, 100g of sugar, Zest of an orange, 1 pinch of salt, 150g of fine semolina, 50g of coconut, 2 tsp baking powder (10g)
Syrup: 200g of sugar (1 cup), 250ml of water (1 cup), juice of one orange (about 60ml)
- Preparation steps
- For the syrup, mix the ingredients, bring the mixture to boil then let it boil for 10 minutes over medium heat,
- Grate the carrots finely
- Mix the carrots with the eggs with a hand blender, or a juice mixer
- After mixing all the ingredients, let the cake mixture stand for 5 to 10 minutes
- Use a mold of 33 /21cm (13 /8,5 inch) buttered and sprinkled with semolina
- Bake in a preheated oven at 180 °C (350F) for 25 minutes, and after 25 minutes turn on the top of the oven only and let your cake brown for 5 to 10 minutes
- Out of the oven, sprinkle the cake with the cooled syrup (the cake must be hot and the syrup cold)
- Decorate with coconut and ground pistachios (decoration of your choice)
- Let cool before cutting and serving
