► Recipe and ingredients:
200 g of jam
1/2 teaspoon baking powder
stir thoroughly
3 eggs
50 ml of vegetable oil
200 g of flour
50 g nuts or dried fruits optional
Cake pan 17 cm, brush with butter and sprinkle with flour
Bake for 35-45 minutes at 180 ° C

    My god this is amateurish shit. How bad is everything in this video, including the cack-handed chopping of the walnuts with a knife 5 times too small? (hint - put them in a plastic bag, seal it and bash it with a rolling pin if you want them that small) Honestly it's all so, so bad.

    It would have had the exact same result if you had mixed the baking powder with the flour instead. Mixing it with the jam doesn't change anything since you beat all the air out of it once you mixed wet and dry, except that now it is over mixed.

    Suggestion: add the baking powder to the flour instead of the jam. That way you won't beat out all the air when you mix in the jam.

    I usually use a bowl for the egg shells as well because it's just more accessible than the bin. If i were to take the shells to the bin it could potentially drip across the floor and create a bigger mess.

    The baking soda made the jam swell and it could have been more than the small bowl could handle. When I make peanut brittle, 1 tsp of baking soda makes the candy mixture swell to 3 times it size.

    to make a better cake with the same ingredients and tools: beat egg whites first. then mix in egg yolk and jam. after that, add the dry ingredients including baking powder and gently fold it. my friend has a recipe like this in her family recipebook :)

    Cookery tip ... when baking cakes/sponges make a small, gradual well in the centre before baking. As the cake/sponge rises - it will have a flat top. If you just smooth it over evenly, the cake/sponge will rise in the middle as shown in the video....

    Even better, fix the problem: Cakes dome because the edges cook faster than the center. You can buy cake stripes (or use wet towels) to put around the outside of the pan. Or easier to just bake "lower and slower"--bake at 325 F for 40-60 min (depending on size of cake). Or try using a flower nail in the center. Rose Beranbaum has a blog post about this that should be easy to Google.

    I imagine it would work if you actually used orange marmalade (appparently, "marmelade" is German for jam). It could taste good with chocolate chips added instead of chopped nuts or dried fruit. Colour would be better too. Hmmm, I might just try it....

    I think you may need to add more sugar as marmalade tends to be quite bitter and the only sugar is in the preserve that was added, unless you are going for a bitter flavour

    @@katietereszczak Good point - I'm a cook, but def not a patissier. Decent commercial maramalade is about 35-40% fruit. It's hard to know when the recipe just requires "jam" (German equivant). I guess just give it a go.

    would also recommend beating your eggs a lot less and definitely not mix the flour with the wet ingredients using any type of electric device. Just fold it in with a spoon or spatula. This is what is called 'an overworked cake' and one of the main reasons why cakes turn out tough / heavy / chewy The comment about the sugar is also valid Given so little liquid too (3 eggs and a drop of oil?) I would think it would taste more like a bread than a cake ... fine if that's your thing 😄

    Use a larger bowl though and properly fold the jam mixture in instead of resorting to the mixer. That was not the light airy cake it should've been.

    @@aliciamullins4466 My thought as they mixed it: Well there goes the airiness, that they tried to get from the baking powder... And yes, it is baking *powder* ("Backpulver") not baking *soda* In Germany you usually can only get baking *powder* in the stores. Baking soda is actually rarely used in Germany. In stores you can rarely find it under the name "Natron", but it is far from certain, that a typical store has it stocked.

    The title does seem a little misleading. There is more to this recipe than just Jam and Baking Powder. Also I am no expert but wouldn't you want to mix the Baking Powder in last and let it rise a little before baking. I feel adding it so early and then mixing it would remove most of the 'fluffiness' it gives (or as another commenter suggested, fold it instead of mixing it)

    Eles se confundem demais com isso, porque chama bicarbonato de "baking soda" e fermento químico de "baking powder". Eu tenho quase certeza que nesse video é fermento químico, mas o bicarbonato deve funcionar também.

    @@carolb5677 Aah, confusion time! Up north (north east of England) where I'm from we have breakfast, lunch, dinner, supper. Tea - as a meal - is what we, in my family, would have late afternoon on a Sunday. Which would be a light snack (after all, who wants a heavy meal after the customary Sunday roast dinner, which is anywhere between about 12noon to about 3pm ish). So for Sunday tea we would probably have a sandwich or 2 and some cake, and a cup/mug of tea or coffee to take it down! THEN, I moved down south, where all kinds of confusion started - to begin with, many people thought I was either Scottish or something like Dutch. I'm a Geordie. Some down here say tea is what you have around 5pm to about 7pm daily! But then up north we called fruit squash 'squash' while down here it's all just 'juice', which to me was pure juice like orange juice, or apple juice etc! Sometimes it is like being in a different country when you go from one end of the country to the other, even just crossing county lines can be confusing at times! I hope that's explained it to you a bit.

    I put my egg shells in the sink and rinse them clean. Let them air dry, toss them into a baggie and smash. When the bag is filled, I dig them into my garden plants. They'll break down over time... fertilizer!

    I thought the cake looked alien with that anomalous hue of blue green. The color became more natural after baking, but the consistency seems to me a bit too dry and springy. It would make a great trampoline!

    The baking powder in jam thing is nonsense, it is all bubbled out when it goes into the oven. Make the dough and gently mix the jam in the end. That way you have a moist and light cake.

    @@haniashahiryar9142 Not at all. The cake takes less sugar so it balances out. I also don’t ice it with caramel icing which a lot of people do, I just sprinkle powdered sugar on it.

    I am assuming because the baking soda + jelly creates the fluffy leavening for the cake. I've never heard of this recipe, but if I were to try it I would fold the jelly mixture into the batter gently until well incorporated. This person started doing so, then beat the bejesus out of it with the electric mixer for some reason. If you gently fold the jelly mixture in, you could retain more gas bubbles resulting in a fluffier, less dense cake.

    given the overworked eggs and mixing the wet and dry ingredients using an electric mixer instead of folding it (plus so little liquid) I would guess it would be more like a dense bread than a cake

    @@vanessagoddess1 I guess this is where the fluffy jam comes into play. It already holds gas and therefore doesn't need to rise (like fluffy egg whites). But I would recommend to mix everything including the nuts together BEFORE adding the fluffy jam stuff thingy. And not to MIX it in but to fold it in carfully... But I guess in the end - a normal cake with mixed in jam will be close enough and less work.
