1. What is an oven shower..??
- The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
2. How to dry in the oven..?? (high temp.)
- 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
Look at the subtitles in the videos, there is detailed temperature.
3. What is the name of baking mat..??
- This is called a teflon sheet.
4. How long do you whisk meringue or do macaronage with mixer..??
- It's not important how long I did.
Because we have different machines and environment..!
You should check the cocsistency of meringue or mixture frequently.
5. What kind of colors do you use?
- Chefmaster liquid colors
You can get it on 'Amazon.com'
6. Please English subtitle

7. What ia your oven and type..?
- My ovens are UNOX 135 and convection type.
8. Where can I get the templetes..?
- I made all templetes myself and I am not
sharing now.. Sorry..! 🙏🏻🙏🏻
9. Do you left or bake immediately..?
- As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
It is a very useful and convenient tip to reduce the time required.
Also you can get shiny and smooth shells.
10. What kind of eggs do you use? fresh eggs or aged eggs?
- I usually use fresh eggs. But' It doesn't matter what kind of eggs you use.
11. Why do you cook in a double boiler?
This is called 'Swiss mering method'. You can
make more stable and strong meringue.

굽기하기 전에 온도를 120c 에서 140c으로 올렸어요? 대류 오븐 없이 이 건조방법 슬수있어요? 저 집에서 기존 오븐 있어요.
딸내미가 제과제빵쪽 공부중이라 집에서 마카롱같이 해봤는데 모양은잘나왔으니 굽고 때려니 깔끔하니 안떨어지고 속이 덜찼어요 뭐가문젤까요? 레시피대루했는디

Hi Sugar Bean! Please let me know how to reserve these macarons, I have tried to put in the fridge with air tight container but It still become soft (not crunchy anymore). Then I can not eat or use it for decoration on the next days. Please show me what is the problem! 😢😢😢

Hey Sugar Bean! Thank you very much for your videos! I have a question|: it seems like your oven is working when the door is opened?? My oven (Unox Bakerlux) stops working when I open the door to dry my macarons( How do you do that? :) and the fan in the oven starts working like crazy when I close the door because it wants to reach the t 140C fast, my macarons on the sides are flying. Could you give me any advice?

I bought the same arianna bakerlux oven too, at first I couldn't figure out the problem. Try putting a silicone glove at the middle bottom part to crack open the door slightly ( you will see there is some kind of knob/hinge that seal the door , I'm not sure how to describe it well, sorry for my poor English :( ). But the oven will continue to work with lights on when the glove is between the knob/hinge and the door close . And yes, my Teflon sheet is flying off crazily too - i use the big metal paper clips to secure the mat on the tray :)

@@fiona241 Haha, Fiona 😅I’m putting knives and forks on the sides of the sheets which is really pain in the neck when I’m trying to take them out because they are super hot and slippery 😂 great idea about metal clips, I’ll try to find them! 👍 Still don’t understand how Sugar Bean’s macarons are stable and don’t move when fan is working..

I suppose if she’s only oven drying them for 2-3 minutes then it’s ok if the oven doesn’t stay on. Because she preheats it to 120c and in 2-3 minutes of the door being open and the oven being off it probably will drop to about 90c at the lowest but it’s too short a time for it to completely go cold. And she does say to oven dry at between 90c-120c. So it should be fine if your oven doesn’t stay on while the door is open :) I hope that makes sense

@@skitsot9046 absolutely! It works great in usual ovens. I just have a problem with the conventional cause it’s very powerful and it reaches needed temperature very fast but fan is too strong. And I wanted to add that I found out that there are software updates for conventional Unox ovens (that have USB) which include some additional fan setting. It might be helpful for Fiona and others who have these ovens. I’m going to give it a try.
Do you have a smaller quantity for the Swiss method please ?

Hi SugarBean, I was wondering after the oven drying is complete, do you take the trays out and preheat the oven again to 140 degrees C or keep the macarons inside with the oven's preheating and baking time.

It’s to prevent the sticky sugar layer stick to the top during delivery. It can mess up the other macarons next to it
