Maybe it's a glitch? They're supposed to get mad if you open their chests for obvious reasons, so maybe the chest he opened registered as one of their own.

Because he placed down a chest were they spawned the game automatically claims the chest to be the piglins chest so when he opened it they got agro as they would if it was in a bastion. Even though he had the helmet it still makes them agro.
