Bit late to the party but a lot of it is research. And he gives them multiple options and reads off them. People have tells. Especially things like repeatingly putting in your pin number, you will fight against it and instinctively want to push your numbers. The last one has me stumped, no idea how he did that.

In most cases, he has methods that you can find out about with deeper research (since magic secrets are hard to find). In this case, the answer is mostly Google + inside info from the staff + a bit of hedging. All of the information he guessed is easily accessible online. For example, he asked Leonard Fournette to think of a person close to him. A family member. The date he gave is his brother Lanard's birthday. Oz likely has inside info on what was going on with specific players that would make it easier to predict their answers. In this case, Lanard might've been in town and with the team that day. He even says "can you see their face as if they were in the room." So perhaps Lanard was actually IN THE ROOM (just speculating a possible solution) which of course is going to make Leonard think of his brother immediately, and audience members always choose the first person that comes to their mind.

These are magic tricks, and the editing makes it harder to figure them out. It’s probably in the magicians contract for it to be edited a certain way. For a lot of them, he’s able to write with a special pen attached to his thumb, but they edit out the moments where he’d be writing it while holding the pad with one hand. With other tricks, he just does research or uses plants to feed him the information.
