Melissa Makes Crab in Coconut Milk (Ginataang Alimasag) | From the Home Kitchen | Bon Appétit

Тәжірибелік нұсқаулар және стиль

Join Melissa Miranda as she makes Ginataang Alimasag, crabs in coconut milk. Melissa uses dungeness crabs for this dish, which may not be easy to find depending on where you live, so whatever crab you can get your hands on will work.

When we cook this we just put everything in one pot. Saves dishes and prep. Of course you add the squash and other veggies a bit later so they don't get mushy. We cook this with lots of water too, it's more soupy than saucy. When cooked this way you can taste the dish as a single item instead of multiple. Some of the squash gets mushed when cooking and adds nice flavor to the soup.

BIG mistake. You do NOT put the crab in live in hot water. It makes the meat taste bitter. It is important to paralyse it in cold water or to freeze for a few hours before cooking.

This is restaurant style. The traditional Filipino way is you put the squash, beans and crabs and let it all simmer in a pot and I'm tellin ya it's the perfect sauce to a bowl of steamed white rice. Nothing beats that creamy white coconut sauce infused with all the flavors of crab fat, fermented shrimp paste, garlic, onions, chilis and ginger. So good!

The editing is still kinda iffy compared to the old days, but I think it's gotten better in the past few videos.
