I think it’s good to note that, as Mean Girls is a movie about tackling sexism, Gretchen, Karen, Janis, and Cady aren’t the only ones caged by their roles, Regina is too. this might be a stretch but i think this line is referring to gretchen being a messenger of regina like jesus with god. the jewish part is most likely because gretchen is actually jewish and the princess part just is just in there because shes a plastic. idk thats my hot take cause i couldnt find anything online

To add on to another good comment, I think it’s an excellent and clever play on words showing how Jesus was the “Prince of Peace” was second to God, and was Jewish. This shows how Gretchen is the princess next to Regina, the queen(thus fitting with her line “Regina is the queen but I’m the head of worker bees”), and thus is second to her, and also she is canonically Jewish and plays into the Jewish American Princess stereotype, so she’s a princess in more ways than one. This part is likely a stretch but since Gretchen is Jewish she also wouldn’t believe in Jesus’ birth, death, and resurrection the same way Christians would, and yet in the movie she still dresses up as a Santa girl and dances to Jingle Bell Rock for Christmas(a Christian holiday obviously), because it’s what Regina wants. Hence, Jewish Princess Jesus.
