Mediterranean-inspired Lemon Herb Chicken with Quinoa Salad in Itaki Electric Lunchbox

This is a meal that requires a little advance prep work to be ready for lunch time. You can prepare the salad and marinate the chicken the day before. Set up your Itaki electric at the office to cook your chicken and voilà: a hot lunch. I found this was enough for 2 lunches.

You need :
About 1# chicken cut into bite size pieces
1 lemon (juice + zest)
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh or 1 teaspoon dried oregano
1/2 cup uncooked quinoa
1/2 cup grape tomatoes, halved
1/2 cup cucumber, diced
1/2 bell pepper, diced
1/4 cup red onion, sliced or chopped
1/4 cup Kalamata olives, chopped
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon red wine vinegar
Garlic & Onion powder
Salt & pepper to taste
