@@VeganV5912 u must love people like me who only eat a carnivore diet, meat tastes even better when u hunt and butcher your own wild game! Here in Australia deer, pigs etc are not native and are feral pests so they want as many shot as possible. Just like rabbits and foxes shoot as many as we can, my dog loves it when I have a good night on the rabbits as he sure loves eating them. Same as when I cull kangaroos for farmers.

Putting your grinder attachments in the freezer overnight before you use them will help keep everything cool too. If fat fills the inside of the grinder body it really cuts down on its ability to move the meat through. That's part of why you want to keep it cool.

I would try the smaller grinding bit first, if it's not working or it's jamming up then maybe start with the larger grinding bit first. If the meat is at the right consistency it has always worked on the smaller setting for me. Hopefully saving a bit of time. I also often grind all my venison at the end of the season, so it just means I have to time out the thaw so the meat is still semi frozen. Makes it easier if I can't get to grinding the meat right away and means there's only one day of set up and break down.
Just to dispel a super common myth. You absolutely do NOT need to add any fat to your ground venison unless you just prefer that for taste. I make all sorts of dishes with my ground venison and it tastes great. When I make burgers, I just add an egg or two depending on portions and the meat stays together perfectly well. I try to only eat meat that I hunt/fish or raise myself so I tried it out of necessity and it seriously is not necessary to add fat.
try running a piece of bread or crackers through when you are finished for easy clean up. Also, I wash and dry all grinder parts after, and then also stick in oven on lowest setting with door cracked for 15 min to completely dry and coat with some "food safe" oil.

Tip I saw on the bearded butcher is to use strips of meat makes it easier for the auger to pull the meat through. I have a hand crank and have been chunking it for years. Always having to push each piece in. Hoping the strips work better.

Double grind is the way to go. It takes a lot more time, if you have a lot to grind, but its worth it. Especially if you mix fat in with the meat.

When the meat is room temp it will stick to the metal and clog the auger making it so that you don’t get as good of a cut when you grind the meat

When measuring pork fat content to add is it based on weight or volume?

Weight. I typically run about 30% beef fat when im grinding venison for burgers and snags. Just find what percentage works for u as its easy to make a few different small batches and see what u prefer.

Some people charge a fortune to grind up your meat.. sometimes more than meat actually cost at the store after charging to wrap it up... Glad I found a man who will grind 100 lb for twenty bucks.. it takes his machine about 5 minutes..

I expected a heart recipe...
I used to use pork fat…but switched to beef suet fat….its tastier….and better texture. But lately Ive just been doing it with no fat if im making hamburger. Fat only for sausage.
I've never been able to find a butcher who will sell me fat or suet. If they are a custom butcher they generally use all the stuff they produce and the grocery stores want me to be willing to buy a hundred pounds worth at a time for them to be willing to hold on to it. Even then they say most of their cuts come pretty lean. Because of that we often end up trying burgers in just a bit of oil and they come out fine. I do like the idea of the iced bowl. That's something I've never tried. Same with rechilling the meat after the first grind. I'll have to give that a try.

alot of people just use Pork belly if u cant find a butcher who can sell u fat. I guess were lucky in Australia as any butcher will put some aside for us.

@@jamiem5364 even that stuff can be hard to find where I live. I really want beef suet and that stuff is the hardest to find. I'll have to ask around again. But for those who can't always find what they need a little bit of olive oil goes a long way when cooking and if you don't want to have any added flavor avocado oil is a good choice with a high smoke point. In fact I do most of my pan searing with it. I actually really love the wild flavor of game meat and that stuff doesn't mask anything.

@@m1garandman you can mix with cheap ground burger with high fat content from local grocery store works well too. I guess I'm lucky went to butcher yesterday and bought 10 lbs of beef fat for $5

If what you said were true, you would poop out leaves as it would just pass right through you. We're Omnivores, not plant-eaters. @@VeganV5912 I don't eat rotting flesh. I eat fresh meat. The moment you put it in the freezer, let alone cook it, any chance of it rotting stops. You eating whatever you want is fine, attacking others without knowing them and telling them what you THINK you know about them, but obviously don't, is wrong.
I've never added fat to my venison, I like it pure venison, I've never had problems with burgers staying together. If you want a beef burger buy beef, and the freezing of the hardware? That's just silly business. Never had problems grinding with a room temperature grinder.

I agree I grind venison plain and it works just fine, I don't like putting other animal fat with it, especially farm raised.
