Today I am going to answer one of the oldest questions of the world - which wine matches with a beautiful piece of meat?! I have little T Bone Steak here and I consulted the wine app Vivino for the best wine matches with Beef. I got a pretty big variety of suggestions, and I am going to taste test which ones match best. Sounds like a tough job but somebody gotta do it. Before we get into the session I just want to thank all of you for your subscribers, likes, and comments - they are greatly appreciated and are very motivating. But now let’s talk about the basics behind food and wine matching. The first thing you need to understand is that, while there are some dos and some don’ts, the only thing that really matters is whether you are having a good time with the match. I do pick wines for dinner because I want to drink that wine and if the food is not a perfect match then that’s fine too - I still have a very nice wine and a very nice meal in front of me. That said: A great match improves the taste of the wine AND the food and in order to find a great match you need to follow some simple rules and we will go through them in this video.
The most important rule is that the wine should give the food something that the food needs and vice versa: A piece of meat might be delicious, but it does not taste acidic or bitter and great red wine will add these dimensions to your sensory experience. I am therefore not looking for similarities between the wine and the food but rather for opposites that attract. I went on Vivino because many of you use the app and looked for recommendations with beef. I looked for wines that are still affordable and that are available internationally so that you can get them if you want to.

    As an Australian Beef enthusiast and wine lover, I applaud your doing the hard yards for us. I once saw a documentary many years ago where a famous French Sancerre wine maker insisted on a bottle of his favorite Sancerre with T-Bone steak cooked over flames.

    Wine and food pairings are so interesting to me! I liked how you described the interaction of the tannins and proteins. Cool stuff. I prefer a nice Brunello di Montalcino with beef.

    Malbec is king :) when it comes to just meat pairing, the Argentinians pretty much have it nailed down. Thanks for this one, this is one of favourite things to do when eating with my wife. When pairing wine with food, I would really recommend to open two different wines as that makes the entire dinner so much more enjoyable, both for your own education and also as a dinner conversation and I've often found wines I dont really like to drink alone to enhance the food as well as the food making the wine more enjoyable, but once the food is finished, the wine is not as pleasant. But primarily, put away the phones, enjoy the food and talk about the wine/food combinations and what works and what doesnt.

    Love langhe Nebbiolo with a steak. Normally high acidity and aggressive tannin that pairs wonderfully with a rib-eye or NY strip. The Napa cabs tend to be too rich and syrupy for most foods in my opinion

    Favorite wine with steak: Aglianico from Campania... or a great big Bordeaux.... or of course a great Cabernet Sauvignon from California.

    Argentinian malbec is always a great choice for beef, in any shape or style. I personally find Clos de los Siete even better than El Enemigo, but both are amazing wines. The cheaper options, like Escorihuela Gascón and Salentein Reserva are fantastic as well - the established Argentinian vineyards have their sh*t well figured out and put out very consistent wines at a high level of quality.

    This was great! At steakhouses the Napa Cab + Steak is so popular that the Napa cabs on the wine lists are overpriced compared to the rest. If you like that American oak + steak combo Rioja is the way to go to avoid the inflated Napa prices at restaurants (even not at restaurants, imo). I’ve had great Syrah with steak, but my palate always veers toward left bank Bordeaux and steak. -Chris

    Malbec is an underrated beauty, there is a great winemaker here in the Adelaide Hills who hosted an Argentinean meat night with pairing wines and the Malbec was hands down the best match. Good job mate, love your videos, very informative.

    Thanks again for another great video. I read one comment asking if you could maybe dig a little deeper in the detail and I would love to see you cover some of the great regions of the world in more detail. With food pairings, a safe bet is to drink what the locals drink such as steak with Malbec in Argentina. A classic has to be a Brunello with a steak Fiorentina. For those who cant stretch to Biondi Santi, Il Poggione represents fantastic value for money; and its easy to find.

    All the Penfolds reds I have tried so far are excellent with steak. Chile Cabernet Sauvignon amd Carmenere are good choices. Chuck steak is a very much underrated cut and I like bold Spanish reds with it.

    Anothal good Vid Konstantin. I usually like Bordeaux.... even right bank heavier on Merlot is nice. Also a sangiovese based wine with some age/structure or not (i've had a Chianti Rufina that worked). Obviously Brunellos but those are over my budget! I've had Tannat a time or two with Meat and it was real good too. I'm all for a lighter red too like the one you have here from Alto Adige ! i'd love to find that wine in the States!

    I love this video. I totally agree with your comment on Syrah and beef. Here in Northern California local vintners make great Syrah based wine. While it seems like it would go with a nice tri-tip, it just is not the best choice. And I agree....drink more porto

    If you like the "El Enemigo - Malbec" you should try the next level of the wknery "El Gran Enemigo", i recommend the Cabernet Franc from Apellation Los Chacayes...! awesome video, regards from Argentina!

    I was once completey flashed by a pairing. I prefer red over white wine and I don‘t like sweet wine at all. We were served a fresh and spicy thai salad in a michelin star thai restaurant in Alsace. It was paired with a Gewürtztraminer. The pairing was absolutely faboulous! In my private life I struggle a lot with food-wine pairing.

    I enjoy Chianti Classico with beef. The cherry and savoury notes go well with a decent steak. There's also a Cabernet from Paarl (Glen Carlou) that I like with beef.

    I had an 80s Bordeaux I fished out of the crappy wines the previous owners of my house in France left behind and paired it with cold pigs trotters in gelatin from the butcher. Magnificent!

    I would've gone the same route actually. I love a good Malbec with beef and I'm actually (a bit) surprised the Crozes-Hermitage didn't work so well! Interested in trying concentrated Whites with beef next time

    I like medium high acidic red wine with good amount of tannins. Sangiovese is one of my top choiche for a rare steak without sauces 😋😋😋😋

    With beef I think more tannic wines go very well. In terms of grape varietal: Bordeaux and the varietals on its own (Cab. Sauv. Cab. Franc, Merlot), Syrah, Malbec, Sangiovese, Tannat, Carménère, Pinotage even though it is not that tannic. Perhaps a muscular Burgundy.

    A video like this but with other pairings (fish and vegetarian dishes) could be interresting. I usually don't struggle that much to find a good red wine to go with meat, but find it more difficult to find good matches for vegetarian dishes.

    I find Malbec works with beef, although some other wines work. Always a pleasure when the food and wine pair well.

    I love to pair Oloroso Sherry with my steak. But I also like Bordeaux (something from Pauillac) and Durif/Petite Sirah.

    Tomas Postigo is amazing with Chuelton de Buey especially if served with pimientos de padron but with a peppery sauce I love Jim Barry´s The Forger. SUper Tuscans like Le Volte can also pair really well with more cooked steaks.

    I'm trying to make a goulash with a 20y/o from Taylor's, which I didn't liked at all (I believe it to be a bad bottle). Read that if you cook the Tawny long it will fit perfect beef. I will see it on the weekend.

    Hi Konstantin, I would be very interested to see a wine tasting with a variety in port wines. Could we expect such a video in the near future ? Also, I do see a lot of information on the internet about storing wines in the long term, but not so much on storing port wines. I have all my regular wines in a wine cooler but my port wines are all on room temperature. Would you recommend getting a wine cooler for my port wines aswell ?

    I am a bit biased on Uruguay. Hace a look at Garzon Tannat Reserva available in a lot of Markets. My best experience was with Bertolino Broglio Premium Tannat Exotic Senta Crianza or Stagnation Dayman Tannat or Artesana las Brujas Reservation Edicion Limitada.

    I don't care what Vivino advises: for me it's Bordeaux left or right bank or Crozes Hermitage. But also "will do": Australian Shiraz, Chilean Carmenere, Argentinian Malbec, Madiran, South of France Mourvedre based wines. Not per definition in that order, to me they can all taste very good and form a wonderful combination: the quality of the wine to me is more important then the grape variety or vineyard it comes from. I like my beef companion to be well structured, with good tannin and well integrated oak, preferably with cassis and cedar notes, even ink and earthy notes. I usually have a quite concentrated red wine sauce with the beef...

    There are different styles of steak which dictate what few wines i might have.; also many different styles of beef and beef dishes so I can’t pick a favorite beef wine. With a t-bone it will be Petit Syrah, Fillet’s Bordeaux, porterhouse’s Merlot. Depends on the steak and if there’s a sauce; but Champagne can work. Champagne and popcorn is a great pairing.

    Totally agree with your opening statements. If I have a particular wine open, and it doesn't match with the meal....so what. Aged Cabernet with fish. Absolutely. Aged riesling with a pint of ice cream. For sure.

    Great video! I was actually able to find the Malbec (2013 vintage though) at a decent price so looking forward to trying it. Is there a chance that you could share some knowledge on how to recognize how long you can keep a wine? I recently bought a wine fridge for longer storing some bottles but I feel I might be wasting precious time on some of the bottles in there.

    I absolutely love your content, don’t hesitate to go a bit more nerdy on your descriptions and making longer videos :) As for steak pairing, nothing beats a great Cote de Boeuf / Tomahawk steak with Brunello di Montalcino (Fattoria dei Barbi 2015 is amazing value or Biondi Santi 2015 if you want to celebrate something). Or last week I made a T-Bone with Antinori Chianti Classico Riserva 2016 from the Tignanello vineyards. I love the high tannins in Sangiovese for steak pairing.

    ABSOLUTELY! I am Italian and might be biased, but whenever I eat a stake I go for Tuscan whines based on Sangiovese even if I am so near to Piedmont (don't let my neighbors know). Don't forget Nobile di Montepulciano or even just a Rosso (di Montepulciano or Montalcino). And - for a great treat, in addition to the whines you listed - try one of the greatets Chianti producers - Isole e Olena

    @@davide8888 Absolutely agree. Nebbiolo is usually too tannic and I feel it overpowers the steak. As for Isole e Olena, I have a few bottles of Cepparello waiting in my cellar for the right moment, I’ve never tasted their Chianti though. I’ll look out for it and buy a few soon.

    During a recent diner, we had the sommelier of the restaurant nearly exclusive for ourselves (not planned). She had us taste wines that missed something when tasted without food, but after a bite, the saltyness of the food completed the wine so well that it became perfectly round. Question: if we would have bought the wine and just drank a glass, we probably wouldnt buy it again, but with a savoury bite it was heavenly. How can i now this beforehand? Its not often suggested on the label in my experience. Maybe i shouldnt just drink wine, but always have something to eat with it?

    Great review Konstantin and Malbec it is 🍇🍷🤩🇦🇷! Personally, I also prefer Brunello di Montalcino for its balance of fruit, tannins and acidity…and doesn’t need much decanting. However, what would you do if your family or friends insist on white? Oaked Chardonnay? Riesling GG? Many thanks and stay healthy !

    I stopped eating meat about two years ago but I love my red wine! Will drink big in your face big fruit reds but not my preference.

    That's really funny. I just opened a bottle of a white Catena Alta Chardonnay which has only little fruit but lots of oak. I immediatly thought this would go well with meat. Tomorrow I will eat steak, so let's see how the rest of the bottle really matches with steak. By the way, I think Port is the perfect wine for cheese :)

    I like your videos and subjects, but may I make a recommendation? Don't cut the smelling and tasting of the wines. It it the most interesting part for some of us. We like the journey, as well as the destination.

    For me, Tempranillo from Rivera del Duero and Malbec from Mendoza are a good match with a piece of steak

    I’m interested in how you approach a recommendation at a dinner where there are vastly different foods, like a sole and a steak. Do you recommend to the lighter dish or are there your go-tos that just good wines, forgetting the food.

    Your steak looked perfectly cooked! How do you season your steak, with only salt? I have a bottle of Black Stallion Cabernet left in my cellar and agree that it’s great with steak.

    A Banyuls or a Maury with food maybe? French fortified. Midway between port and a standard red. ( Still intended to be dessert wines though. )

    Here in Brazil we like a Churrasco! and if the meat is grilled, I love a particular wine of Uruguay: The Bouza Tannat. Cost only 15 us and is powerful and its made without wood. lots of fruit, but with the accidity of the early harvest fruit. If you like the El enemigo Malbec, you will like the Bouza's. Hope you find it in Europe, cause is a great producer of distinct wines. no for the faint of heart! cheers!
