Meal Prepping 5 SIMPLE Dinners for our Large Family

We are meal prepping by taking a short amount of town one evening and getting food prepped for FIVE meals! This saves us so much time. And this week, we found a new, simple dinner that we will definitely be repeating!!!

    When my husband realized how much easier my pressure cooker made my life, he went out and got me the next two sizes down for Christmas 😂 So now I have an 8 qt, a 6 qt, and a 3 qt and I use them all the time. I thought he was crazy for buying me more than one but I'm so glad to have them when I do freezer cooking.

    Add brown rice, tomato soup, chillis tomatoes, corn, black beans,cheese, cumin , taco seasonings, chicken mixture layer in casserole dish top with more cheese cook on 400 till firm. Serve as tacos or nachos. I do my as lettuce for taco shells. Very very filling.

    Chicken tacos in instant pot: i add a small can of mild green chilis, extra cumin and some brown sugar. The kids devour it. I know you don't do sugar, but the extra cumin and chiles. maybe extra water to keep it from burning in the pressure cooker.

    Sarah, If you forget to thaw the meat, fill the sink with water, place the meats in their package in the water and it will thaw. In about 1/2 hour you are ready to go. I do this all the time.

    I make a mung bean stew made with coconut milk, goes so well with grilled fish and white rice! Like one lady mentioned earlier; you need a binder for the meat to make it easier to form, bread crumbs will do it :)

    Its easy when you are organized to do it. I cooked for a living for almost 30 years , 300 meals by myself, organization is the key and Sarah and Solo have it together alng with help from older kids.

    I've been vegan for 2 years now, and I'm so glad to hear your family is giving it a try! Theres a whole other flavor town so many people don't know about until they try going vegan. KZread and Instagram are a great recourse to find recipes outside of the normal vegan alternatives.

    Great video!!! Hey judah, i have a tip for you when using the hamburger press. Place parchment on both sides. The meat will stick to the parchment. Leave the parchment on each burger.

    I do the fish mixture topping on chicken! Put spinach on the bottom, then chicken, and put sour cream, mayo, and parm mix on top and all done! So yummy and keto.

    I have that same burger former. If you use burger that is very cold out of the refrigerator less sticking. Plus definitely parchment paper. The key is very cold burger not just defrosed out of the microwave. Love watching your family.

    Stems from broccoli are great in vegetable soup. Freeze them until you are ready to use them. Add tomatoes to the Mayo for the fish. You gave me some great ideas. All looks good.

    When I do tacos, whether it be with ground beef or chicken I like to add brown rice, and sometimes even some beans. I like few ingredients and then just cheese and sour cream. Judah helps you quite a bit. Its always nice to see a boy turning into a man. And he's going to make some woman very happy. Because there are not to many who will go grocery shopping for their mom, cook and clean. Etc. Actually all of your kids are so good and so helpful to you

    I notice you make your broccoli salad often. One thing you may want to try is using a food processor to chop up those stem pieces that are your scrap pile you always have left over to make a broccoli slaw or salad as well. It is really delicious and a great way not to waste. I get the same bags out at Sam's. I use the chopped up processed broccoli in a salad *trimmings from 2 bags) we add 1-3 Large Quartered tomatoes or about 1 Cup Cherry or Grape Tomato 1-2 large chopped green apples , 1/4 C dried cranberry, and a bag of super fine or angel hair shredded coleslaw cabbage mix.. I add in a handful of extra shredded carrots if the mix did not have enough. Then we dress it either depending on our mood...we have 2 go to dressings...creamy curry dressing or a tangy sour dressing. Our sour dressing make is 1/4 C horseradish, brown, or Dijon mustard (your preference), 1/4 C Apple Cider Vinegar, Cilantro (Optional), and 1/3 C Olive Oil all combined...the creamy is 1 C Mayo or Vegan Mayo (your preference), 1T- 2T (your favorite) Curry Powder or Paste, 1/8 (each) tsp ground garam masala & cardamom (optional but the flavor that makes our's unique), 2T Lemon Juice, 2T Dijon Mustard ... Mix dressing ahead of time and dress salad no 1- 2 hours before serving I always eyeball everything but these are guesses about the amounts I use on most everything, in case anyone wants to try this or any variation of it. We have actually added cooked, grilled chicken to the curry version and made chicken salad out of it for a light summer time dinner before too. If you are curried chicken salad fans, it will be a hit.

    Creamy salsa chicken is a kid favorite at my home. I just do chicken thighs, mild salsa and cream cheese in the crock pot and cook it for 4-6 hours. My boys like it with sour cream and cheese on a tortilla. I enjoy it with ranch, tomato and lettuce. It is always so good the next day.

    Hi from ND, with the Hamburger press, cut waxed paper into squares, 1 for bottom 1 for top , it will work better. Hope it helps. Love your Channel.❤️👍🏻

    Judah...grate some onions, tomatoes, Worcestershire sause, salt , pepper, garlic and the secret ingredient dryed bread crumbs. Kneed it like dough it will bind the ground beef and make perfect pressed burgers...if you have spice for mince where you live...add that in aswell before you kneed or mix.

    Ground flax seed will too. I don’t like bread crumbs in my hamburger patties. Changed the texture for me. I use egg and flax. Plus Montreal Steak seasoning that I get at Sams. Would love onion in it but picky kids .

    We also add one packet of taco seasoning mix in with the chicken and salsa and it’s delicious! Can be made into chicken tacos, nachos, burritos etc! ❤️

    Hi Sarah. A tried and true favorite for tilapia in our house...do what you did, but use crushed salt and vinegar potato chips on top of the mayo mixture on top of the fish and bake. SO GOOD! Weird sounding, I know...but so good!

    I love that burger press! As you saw it works incredibly well. It definitely works a bit better if you use parchment or butcher paper squares as you read. Not sure if you make ahead and freeze them, but I would do this and just keep the butcher squares on the top and bottom to help separate out however many I needed once they were already frozen. Great work, Judah! You'll get the hang of it. (I think I bought the burger squares off of Amazon, was a lot easier and cheaper than using my own parchment and chopping it up.)

    Oh man. Salsa chicken!!! I make mine in the crockpot as I don’t have a pressure cooker, but I’m sure you can adapt it easily. Throw a couple chicken breasts, can of fire roasted corn, can of black beans, 24oz jar any salsa (or more or less depending on your preference), can add a can of fire roasted tomatoes or a cut onion if you want. Cook on high 4 hours or low 6. Shred the chicken. Add a block of cream cheese until softened. I eat mine with a spoon and too either shredded cheese and diced avocado, but can fill tortillas, mix with rice, eat with tortilla chips, etc. so good!

    Great meal preps! A couple of suggestions : peel the outer layer from the broccoli stems and use the stems, sliced, in the broccoli salad or to make broccoli cheese soup. When making frozen meat ahead like that, try placing it on a rack. That way, when it thaws, the water will collect in the pan and can be discarded. Your sauce won't be as watery.

    Hey Sarah! I make that same mayo/park paste and top chicken with it and then sprinkle the top with those Costco/Sams real bacon bits- everyone loves it!! Sometimes I sub non fat Greek yogurt for the mayo and no one can tell the difference. Also I grew up in the south and broccoli salad is a staple down here!!😀we always add a splash of apple cider vinegar to the dressing and a pinch of sweetener and for the salad add sunflower seeds and raisins or the last time I used orange flavored cranberries from Trader Joe’s and it was delicious!!

    I buy the papers for the patty press. It helps with clean-up, and the papers keep the burgers from sticking together.

    If you put parchment paper on the top and the bottom of the burger press it works very well. I have a burger press and I usually put the parchment paper on the top and the bottom and no sticking. 😊

    Make the ground beef cold by putting it in the fridge. Colder the better. Then use a precut square wax paper on each side. Put them back in the fridge til ready to use or freeze them flat. Then you can stack them up once they are frozen and bag them up in a bread bag/similar or portion out and vacuum seal them. Works great!

    Hi Sarah! You can try putting some taco seasoning in the pot with the frozen chicken and salsa. Try to get a salt free version, but if that’s not available, some simple spices will create the same effect: 2 tbsp chili powder, 1/2 tsp cumin, 1 tbsp paprika (smoked is the best to me personally), cayenne pepper is optional, S and P to taste! I would personally add the sour cream after the chicken is cooked and shredded. PS, been watching you for years, and love to see your channel and family growing! 💕

    Put wax paper or parchment paper under the meat and another sheet over the meat to keep from sticking. I’ve used 2 small salad plates and pressed the meat between them using wax paper for years. Much easier than that gadget and easier to clean up. The thickness of the patty depends on hard hard you press the top plate down. You can also make enchiladas out of the chicken filling😋

    My mom always used a hamburger press, the old school type. When she would buy several pounds of ground chuck she would make all of the meat up and freeze it in patties. Those patties are much easier to thaw out than a big hunk of meat. She would cook the meat in various dishes. Be sure to use the wax paper.

    You can peel your Broccoli stems to expose the tender stem, chop it and add to your florets to stretch the veg. I find once peeled, the stems are sweet and add a really nice texture. :)

    YES TO THE RANCH PACKET!! I add a tablespoon or two of hidden valley ranch seasoning to almost every crockpot meal I make.. it just seasons it so well and doesnt even taste ranch-y to me... and I typically omit the salt and then just salt to taste at the end if it needs it.

    Sounds good, but taco seasoning plus a ranch packet is a TON of salt - if you use the name brand packets that's over 4,400mg of sodium!!!

    I found you through the Miller family from Nashville on their recent stop on the way to Utah. I have been catching up on your shows since. I just wanted to suggest that the next time you make your broccoli salad try it with sunflower seeds and dried cranberries it is amazing.

    Judah, if you want to make quarter pound burgers. Put a quarter pound of meat in the press. Figure out how many pounds you’ll need to feed your family then divide buy four. Use wax paper on the top too. Good luck!
